Cheese Pasta Bake

Preheat broiler to high. heat oil in large oven proof skillet over medium high add onion, saute 2 mintues add burge...
- 1 T olive oil
- 1 c chopped onion
- 8 oz burger
- 3/4 tsp dried oregano
- 1 1/4 c unsalted chicken stock
- 1/2 tsp black pepper
- 1 1/2 c unsalted crushed tomatoes or tomato sauce
- 8 oz uncooked whole grain penne
- 4 oz shredded mozzarella cheese.
Green Beans with Mushrooms, Balsamic, and Parmesan

Preheat oven to 450F/230C
- 8 oz. mushrooms, sliced in 1/2 inch slices (I used brown crimini mushrooms, but any mushrooms will work)
- 1 lb. fresh green beans, preferably thin French style beans
- 1 1/2 T olive oil
- 1 T balsamic vinegar
- salt and fresh ground black pepper to taste
- 2 T finely grated parmesan cheese
No Bake Bars

Melt peanut butter, honey and coconut oil over medium-low heat
- 1 cup natural peanut butter
- 1/2 cup honey
- 1/2 cup unrefined coconut oil (be sure to use unrefined for the coconut flavor)
- 2 cups dry oats (not instant)
- 1 C shredded coconut
- 1/2 C chopped walnuts (optional)
- 1 1/4 cups dark chocolate chips
- 1 t vanilla extract
Enchilada Stack

Slow cooker...fits perfect in instant pot
- 1 1 1 lb ground beef
- 1 1 oz) can 1 (15 oz) can black beans
- 1 1 1 c corn kernels
- 1 1 1 c salsa or 1 can cream of mushroom soup
- 1 1 oz) can 1 (4.5 oz) can chopped green chiles
- 2 2 2 tsp taco seasoning mix
- 1 1 can 1 (10oz) can mild enchilada sauce
- 4 9-inch 4 9-inch flour tortillas
- 2 2c 2c shredded mexican cheese blend
Corn Casserole

- 1 medium onion, chopped
- 2 eggs, slightly beaten
- 1 can whole kernel corn, drained
- 1 can creamed corn
- 1 pkg. dry Jiffy corn muffin mix
- 1/4 cup margarine, melted
- salt & pepper
- 1 cup sour cream (It always gets partially mixed in when I do this)
- 1 1/2 cups grated cheddar cheese.
Baked Beef Tips and Noodles

- 2 lbs beef tips
- 1 can condensed cream of mushroom soup
- 1 packet dry onion soup mix
- 1 packet brown gravy
- 1 c water
- 1 4 oz can mushrooms
Orzo Pasta Salad

Cook pasta according to package directions
- 1 1/2 cups uncooked orzo
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 tb minced shallots
- 1 tb parsley
- 1 tb lemon juice
- 2 tsp orange juice
- 1 tb Dijon mustard
- 2 1/2 tablespoons EVOO
Brown Rice Citrus Salad

Cook rice as per directions and cool in fridge
- Ingredients
- 1 c brown and wild rice
- 1/2 c dried cranberries
- 3/4 c pecans, chopped and toasted
- 2 stalks green onion - finely sliced
- 2 T apple cider vinegar
- 2 T EVOO
- 2 T Honey
- 2 T OJ
- 2/4 tsp orange zest
- pepper to taste
Brownie Bottom Caramel Cheesecake Bars

- 1 pk brownie mix (19 ish ounces)
- 1/2 c butter, melted
- 4 eggs
- 2 (8oz) pkg cream cheese, room temp
- 1/2 c brown sugar
- 1 T vanilla
- 3 T flour
- 1 c sour cream
- 1 (14 oz) jar caramel sauce
Cake Mix Cookie Bars

Preheat your oven to 350 degrees
- 1 Box yellow cake mix (I used Betty Crocker)
- 1 Small box instant vanilla pudding
- 1/4 Cup water
- 3/4 Cup vegetable oil
- 2 Eggs
- 1 Cup chocolate chips. I used 1/2 cup holiday mini M&M's and 1/2 cup milk chocolate chips.
