Easy French Toast Casserole (Make Ahead)

Great for Christmas morning as you make it the night before and pop it in the oven for about an hour
- 1 loaf French bread
- 12 eggs, beaten
- 1 (8 ounce) package cream cheese, cut into 1 inch cubes
- 1 cup maple syrup
- 1 teaspoon sugar
- 1 teaspoon cinnamon
- powdered sugar
Chocolate Chip Coffee Cake

Preheat oven to 350 and grease 8 inch pan
- 2 c flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/4 c sugar
- 1 tsp cinnamon
- 1 stick butter-room temp
- 2 large eggs - room temp
- 1 c sour cream
- 1 tsp vanilla
- 1 cup chocolate chips

- 2 lemons, 1 thinly sliced, 1 juiced
- 4 cloves garlic, minced
- 1 teaspoon kosher salt

- 1 1/2 cups wild rice blend (I like Lundberg Wild Blend)
- 2 1/4 cups gluten-free chicken broth
- 1 dried bay leaf
- Salt and pepper
- 4 slices bacon, chopped
- 2 tablespoons butter
- 1 jumbo shallot, or 1 small onion, chopped
- 8 ounces mushrooms, sliced
- 2 stalks celery, finely chopped
- 1/2 teaspoon dried thyme
- 3 cloves garlic, minced
- 1 tablespoon chopped fresh sage
- 1/4 cup whole almonds, chopped
- 1/4 cup dried cranberries
- 1/4 cup freshly grated parmesan cheese, optional

- 2 tablespoons packed fresh basil leaves, roughly chopped and packed

- 3 tablespoons almond meal (ground almonds)

- ◾3 cups Beef Stock Or Beef Broth, Plus More As Needed
- ◾1 whole Yellow Bell Pepper, Seeded And Diced
- ◾1 whole Red Bell Pepper, Seeded And Diced
- ◾1 whole Green Bell Pepper, Seeded And Diced
- ◾4 whole Carrots, Peeled And Sliced On The Diagonal
- ◾5 whole Red Potatoes, Cut Into Chunks
- ◾3 Tablespoons Tomato Paste
- ◾1/2 teaspoon Kosher Salt (more To Taste)
- ◾1/2 teaspoon Black Pepper, More To Taste
- ◾2 teaspoons Dried Parsley Flakes
- ◾1/2 teaspoon Ground Oregano
- ◾1/4 teaspoon Cayenne Pepper (more To Taste)
