Burger Steaks with Mushroom Gravy and Sweet Potato Wedges

This is a hearty meal of burger steaks, sweet potato wedges smothered in a savory mushroom gravy made from scratch
- 3 (8-ounce) sweet potatoes
- 1 1/2 tablespoons olive oil, divided
- Cooking spray
- 1 teaspoon black pepper, freshly ground, divided
- 3/4 teaspoon kosher salt, divided
- 1 pound 90% lean ground sirloin
- 1/2 cup red onion, chopped
- 1 1/2 teaspoons fresh rosemary, chopped
- 1 (8-ounce) cremini mushrooms, sliced
- 1/4 cup water
- 1 cup unsalted chicken stock
- 1 tablespoon all-purpose flour

- Roast
- 1 C broth
- 1/2 C Balsamic vinegar
- 1 TB worchestershire
- 1 TB Soy saucy
- 1 TB honey
- 1/2 tsp red pepper flakes
- 4 cloves garlic
Tomato Salsa

1. Fill a large pot with water
- 4 large ripe tomatoes
- juice of one lime
- 2 garlic cloves, peeled
- 1 jalapeño, seeded (optional) roughly chopped
- 1/2 small white onion, roughly chopped
- 1/4 cup cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- salt and freshly ground black pepper
Pumpkin Pasta (Rachael Ray)

cook pasta to al dente heat evoo two turns of pan over medium heat
- 1 lb penne pasta
- 2 T EVOO
- 3 shallots, finely chopped
- 3 cloves garlic, grated
- 2 c unsalted chicken brother
- 15 oz can pumpkin puree
- 1/2 c heavy cream
- 1 tsp hot pepper sauce
- 2 pinches ground cinnamon
- 1 pinch nutmeg
- 7 leaves fresh sage
Quinoa “Mac” & Cheese With Peas

Combine quinoa and chicken broth in large saucepan, and bring to a boil
- 1 1/2 Cups dry quinoa, rinsed
- 3 Cups chicken broth (or water)
- 3 Roma tomatos, seeded and diced
- 1 Cup frozen peas, rinsed in colander under warm water until no longer frozen
- 2 tablespoons olive oil
- 1/2 Small onion, minced
- 2 Cloves garlic, minced
- 1 Cup milk (low fat or full fat, depending on preference.)
- 2 Oz. cream cheese (low fat or full fat, depending on preference.)
- 3/4 Cup shredded cheddar cheese (low fat or full fat, depending on preference.)
- 3/4 Cup shredded smoked gouda cheese (low fat or full fat, depending on preference.)
- 1/2 Cup shredded parmesan cheese (low fat or full fat, depending on preference.)
- 1/2 teaspoon paprika
- salt and pepper to taste
No Carb Chicken Enchilada

1.Spray a 9×13 Pan with non stick spray
- 2-3 pounds boneless skinless chicken breasts (I fillet mine so they cook faster but you don’t have to)
- 1 can of green chili enchilada sauce (I use Old El Paso)
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of garlic salt
- 1/2 – 1 cup of shredded Monterrey Jack Cheese

Easiest Spanish Rice

- 1/4 onion chopped finely (optional)
- 1 1/2 cup uncooked white rice
- 2 cups water (or chicken broth -I normally do 1 or 2 cups broth)
