Tuna Pasta Salad with Dill and Peas

Bring large pot of water to boil
- 1 lb. mini bowtie pasta
- 1 cup frozen peas
- 1/2 cup diced red or white onion
- 3/4 cup diced dill pickle
- 2-5 oz. cans tuna, drained {I used albacore tuna packed in water}
- 1/2 lemon, juiced
- 1 cup real mayonnaise
- 1 tablespoon dried dill
- salt & pepper, to taste
Enchilada Sauce

Low sodium
- 3 TB Chili Powder
- 1.5 tsp Oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 3 TB cornstarch
- 3 TB avocado oil
- 3 C veggie stock
- 4 oz Tomato Paste
- 1/2 tsp pepper
- apple cider vinegar or lime juice to taste.
- Possibly honey?
Skinny Alfredo Sauce

Cook pasta al dente according to package directions, in generously salted water
- 1 Tbsp. olive oil
- 4 cloves garlic, pressed or minced
- 3 Tbsp. flour
- 1 cup chicken broth
- 1 cup low-fat milk (I used 1%)
- 3/4 cup freshly-grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- (optional topping: chopped fresh parsley)
- Add basil, nutmeg, thyme, cheyenne
Pizza Sauce

Low Sodium, combination of a couple recipes
- 1 (15 oz) can NSA tomato sauce
- 1 (6 oz) can NSA tomato paste
- 2 garlic cloves
- 1 TB dried oregano
- 2 tsp dried basil
- 1/2 tsp onion powder
- 1/2 tsp granulated sugar
- 1 TB honey
- 1 TB grated parm
Citrus Marinade

use whatever citrus is in fridge (try grapefruit!?!)
- 1/2 c orange or grapefruit juice
- 2 T fresh flat leaf parsley, chopped
- 2 T fresh lemon or lime juice
- 1 T EVOO
- 1 tsp dried thyme leaves
- 1 garlic clove, minced
- 1/4 tsp black pepper

- 1 1/2 cups matchstick carrots
- 2 large gala apples, sliced into matchsticks (about 3 cups)

- 1 cup natural peanut butter, smooth or crunchy (you could also use PB2 for less sugar, less fat)
- 1 cup sugar (you can use stevia instead of sugar, and it's healthier!)
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract

Preparation 1. Soak red onion in cold water for 5 minutes; drain
- 1/4 cup finely chopped red onion
- 1/3 cup canola mayonnaise
- 3 tablespoons 2% reduced-fat Greek yogurt
- 1 tablespoon cider vinegar
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 cups coarsely chopped broccoli florets (about 1 bunch)
