Red Robin's Campfire Sauce

Mix all ingredients in a medium bowl until well combined
- 1 cup mayonnaise, use Best Foods brand
- 1 cup barbecue sauce, use Hickory Honey Sweet Baby Ray's brand
- 1 teaspoon dried chipotle powder (can use Mrs. Dash Southwest)
Twice Baked Potato Casserole

- 4 lbs red skinned potatoes
- 4 cloves fresh garlic
- 1/4 cup butter
- 1 cup of sour cream (I use light)
- 1/2 cup of milk or cream (add more or less to taste)
- 4 oz cream cheese , softened (I used light)
- 2 cups grated cheddar cheese
- 2 green onions thinly sliced
- 10 slices bacon , cooked crisp and chopped or 1/2 cup of bacon bits
- salt & pepper to taste
- TOPPINGS
- 1 green onion sliced
- 2 slices of bacon , cooked & crumbled
- 1/2 cup cheddar cheese

- 1/4 t Celery Seed
- 1/2 t Nutmeg
- 1/2 t Coriander
- 1 t Onion Powder
- 1 t Paprika

Ranch Chicken with Potatoes & Green Beans

Cut potatoes into bite size pieces and place into 1/3 of a 9×13 baking dish
- 2 lbs boneless skinless chicken breasts
- 3 tblsp Ranch Seasoning mix (you may buy a seasoning packet or see below for recipe)
- 1/2 cup butter, melted
- 6-8 red potatoes
- 12 oz green beans (fresh or frozen)
Skillet Chicken Fajitas

1. Preheat broiler to high
- 2 teaspoons olive oil
- 1 cup sliced red onion
- 1 cup sliced orange bell pepper
- 1/2 cup fresh corn kernels
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup unsalted canned pinto beans, rinsed and drained
- 3/4 cup chopped tomatoes
- 1/2 cup unsalted chicken stock
- 1 1/2 tablespoons fresh lime juice
- 4 ounces skinless, boneless rotisserie chicken breast, shredded
- 4 ounces part-skim mozzarella cheese, shredded (about 1 cup)
- 8 (6-in.) corn tortillas
- 8 teaspoons reduced-fat sour cream
- 1/2 ripe peeled avocado, cut into 8 slices

- 1 cup Strong Coffee (can use decaf if you want)
- 3/4 cup fat free milk (used 40 calorie almond milk)
- 2 TBSP Lite Chocolate syrup (45 calories)

Heat oven to 375 Whisk eggs, milk and sauce and pour into a greased 9x13 pan
- 10 large eggs
- 1 c whole milk
- 1 tsp salt
- sausage or bacon
- 6 slices cheese
- 6 english muffins
Salmon Burgers with Lemon-Basil Mayo

Prepare grill for direct grilling on medium-high
- 2 ear corn
- 1 lb. skinless salmon fillet
- 3 green onions
- 1 large egg white
- 1/2 c. plain bread crumbs
- 3/4 tsp. salt
- 1/2 tsp. finely grated lemon peel
- Cooking spray
- 1/4 c. mayonnaise
- 1 tbsp. chopped basil
- 1/2 tsp. finely grated lemon peel
- 4 buns
- Bibb lettuce

- 1 Tablespoon dried tarragon
