Heat vegetable oil in a large sauce pan over medium high heat
- 1 tablespoon vegetable oil
- 1 large onion, halved and thinly sliced
- 4 red potatoes, cubed
- 1/2 pound green beans, cut into 1 inch pieces
- 5 cups vegetable, chicken, or beef broth
- 2 tablespoons whole-wheat flour
- 1/2 cup sour cream
- 3/4 cup sauerkraut with juice
- 1 tablespoon chopped fresh dill
- Salt and pepper to taste

- Crust:
- 1 c butter (real, don't cheat)
- 2/3 c sugar
- 2 1/4 c flour
- Filling:
- 5 eggs
- 1 3/4 c sugar
- 1/3 c flour
- 1/2 t baking powder
- 2/3-3/4 c lemon juice (fresh - approx 5 medium lemons)

- 6 T butter
- 1 teas vanilla

- 2 1/2 pounds red potatoes, scrubbed and cubed
- 1/4 cup freshly grated Parmesan
- 1/4 cup light sour cream
- 2 heaping tablespoons whole-grain Dijon mustard

- 1 egg, lightly beaten
