- 2 serrano chilies, seeded and finely diced
- 2 tomatoes, seeded and diced

- 1/2 red onion, peeled and diced
- 1 avocado, peeled and diced
- 1 handful fresh cilantro, chopped
- Kosher salt to taste
- Freshly ground black pepper to taste

- 1 pound small shrimp, peeled and deveined
- 1 small cucumber, quartered and sliced
- 1/4 cup sliced red onion
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons pickled jalapeño chiles, minced
- 2 garlic cloves, minced
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon cracked pepper
Red Snapper & Mango Ceviche

On our date to Sugarbeet restaurant in Longmont, Colorado, I had the most marvelous ceviche
- 16 ounces red snapper filets, skinned, sliced thinly into 2-inch pieces
- 1/2 cup freshly squeezed lemon juice
- 1/4 cup freshly squeezed lime juice
- 2 medium jalapeños, seeded and minced
- 1 large red bell pepper, finely chopped
- 2 large mangos, finely chopped
- 1 medium red onion, finely chopped

Shrimp, Scallop & Crab Ceviche with Chipotle & Avocado

This is not a true ceviche since the seafood is poached instead of being 'cooked' in an acid but it's served in the
- CHIPOTLE MARINADE:
- 1 tomato, seeded and coarsely chopped
- 1/2 red pepper, seeded and coarsely chopped
- 1/4 cup white onion, peeled and coarsely chopped
- 1/4 cup white wine vinegar
- 1/8 cup water
- 1/4 cup sugar
- 1 chipotle pepper
- CEVICHE:
- 1 pound jumbo lump crab meet, picked over, just try not to break up the lumps, you've paid good money for the bigger pieces
- 1 pound fresh shrimp, poached (see recipe below) and chopped into 1" pieces
- 1 lemon cut into six pieces. Easy peel is fine but you want the shells on for now
- 1 pound scallops, muscle removed, cut into quarters, if you're using the smaller bay scallops you don't need to quarter them
- 1 cup lime juice
- CHIPOTLE MARINADE:
- 1 red onion, skinned and minced
- Juice of 1 lime or about 3/4 tablespoons lime juice
- 1/2 bunch cilantro, chopped
- 1 avocado, chopped for garnish

- 1 pound shrimp, heads off but unpeeled, easy peel is fine
- 2 quarts water
- 1 vanilla bean, split
- 1 stalk lemon grass, chopped
- 1-inch piece peeled ginger, chopped
- 2 garlic cloves
- 2 whole star anise (or the equivalent of the 6 'points' per anise if they are broken)
- 1/2 cup finely diced yellow pepper
- 1/2 cup chopped scallions
- 1 to 2 cloves garlic, minced
- 1/4 chopped cilantro, basil or mint or a combination of all three, which ever you like
- Juice of two limes or about 1 1/2 tablespoons of lime juice
- 1/4 cup mayonnaise
- 1 to 2 teaspoons Chinese chili paste (sambal olek) There's really no substitute for this Indian chili paste doesn't taste remotely similar

- 1/2 pound shrimp, easy peel is fine but leave the shells on while poaching
- 1 lemon, cut into 6 pieces
- 1 pound scallops, muscle removed and sliced horizontally (if you use bay scallops they won't need to be sliced)
- Juice of 12 limes,or about 10 tablespoons of lime juice
- 1 red aji limo, minced (a peruvian red chili either fresh or jarred is fine)
- 2 red onions, thinly sliced
- 1 red pepper, thinly sliced, optional
- Juice of 1 lime, or 3/4 tablespoon of lime juice
- 2 sweet potatoes, not yams, boiled, peeled and cut into 1" cubes
- 1 fresh ear corn on the cob, cooked and cut into small rounds (DO NOT use frozen, the fresher the better)

Asian Tuna Ceviche

Use the best quality tuna you can find, sushi grade if available for this tuna ceviche
- 1 pound fresh tuna, cubed into 1/2 pieces
- Juice of 2 limes, about 1 1/2 tablespoons
- Juice of 1 white grapefruit, be sure to strain out the seeds
- 1 teaspoon toasted sesame oil (this will be a brownish color not clear, check in the Asian food section of your marked)
- 2 tablespoons coconut milk
- 1 tablespoon soy sauce
- 6 Thai purple basic leaves, chiffonade (i.e. cut into thin strips), you can use regular basil if you can't find the purple Thai variety
- 6 cilantro leaves, chopped
- 1/2 cup chopped scallions
- 1 teaspoon finely chopped chili pepper such as rocoto or aji Amarillo (these are both Peruvian chilis, you can use fresh or jarred but the fresh will be somewhat hotter so you might need a little more if you're using jarred)
- 1 teaspoon toasted sesame oil
- Juice of 1 lime or about 3/4 tablespoons lime juice
- 1/2 cup finely diced water chestnuts
- 1/4 cup finely diced mango
- 1 tablespoon vegetable oil
- 4 Asian pink shallots, peeled and thinly sliced (you can use regular shallots but they'll be a little bigger so use 3 instead of 4)
- 1 avocado, finely chopped
Vegan Ceviche

- 2 teaspoons smoked paprika
