Pasta, Bacon & Roasted Pepper Frittata

This frittata recipe is perfect for a mid-day weekend brunch
- 1 1/4 cups fat-free egg substitute
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon black pepper
- 1 cup frozen peas, thawed
- 5 slices Canadian bacon, halved and cut crosswise into matchsticks
- 1/2 cup coarsely chopped roasted red pepper
- 4 cups whole wheat spaghetti, cooked
- 1/2 cup shredded part-skim mozzarella cheese
Creamy Carbonara with Bacon

After cooking the bacon, garlic and onions, add cream cheese and milk
- Tool: 12" chef gourmet skillet
- Cooked pasta (i used whole wheat for added Fiber)
- Few slices of bacon: sliced and cooked with minced garlic and chopped onions (drain fat)

- 2 cans evaporated milk ( i used 1 can evap. and 1 cup regular milk)

Cider Glazed Boneless Pork Loin Chops

This excellent recipe comes from America's Test Kitchen (Cook's Illustrated)
- GLAZE:
- 1/2 cup distilled white vinegar or cider vinegar
- 1/3 cup light brown sugar
- 1/3 cup apple cider or apple juice
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- Pinch cayenne pepper
- CHOPS:
- 4 boneless, center-cut pork loin chops, 5 to 7 ounces each, 1/2 to 3/4 inch thick
- Note: I used 2-inch thick chops and increased the cooking time by about 10 additional minutes
- 1 tablespoon vegetable oil

- 1.5 kg pork belly slab, skin on
- 3 whole garlic bulbs, peeled and roughly chopped
