1 Saute pepper and onion in skillet with Pam
- 1 green bell pepper, chopped
- 1/2 medium onion, chopped
- 1 (10 1/2 ounce) can Healthy Request cream of mushroom soup or 1 (10 1/2 ounce) can Healthy Request cream of chicken soup
- 1 (10 ounce) can Rotel Tomatoes
- 6 ounces cubed cooked chicken
- 4 corn tortillas, torn in pieces
- 1/3 cup shredded mexican cheese
Wilted Spinach Salad

Place spinach in large bowl add the sliced green onion
- 8 cups torn fresh spinach
- 1/4 cup sliced green onion pepper
- 3 slices bacon crumbled
- 1 tbsp white wine vinegar
- 2 tsp. Lemon juice
- 1/2 tsp sugar
- 1/4 tsp salt
- 1 hard boiled egg.
Baked Chicken with Dijon and Lime

- 8 small chicken thighs, skin removed
- 3 tbsp Dijon mustard
- 1 tbsp light mayonnaise
- 1 clove garlic, crushed
- 1 lime, squeezed, and lime zest
- 3/4 tsp pepper
- salt
- dried parsley
Hummus

Blend all ingredients until a paste, add more lemon to taste and oil for required texture
- 1 1 can 1 (15oz) can chick peas
- 3 3 3 tablespoons olive oil
- 3 3 3 tablespoons tahini
- 1 1/2 1 1/2 1/2 tablespoons lemon juice
- 1 1 1 clove garlic chopped
- 1 1 1 teaspoon salt
- 1/2 1/2 1/2 teaspoon ground black pepper
- Can Can add Hungarian paprika for flavor.
Skillet Garlic Shrimp

Combine shrimp, olive oil, garlic, chili powder, worcestershire sauce and lemon in a bowl
- 1 lb shrimp
- 3 Tbsp olive oil
- 2 Tbsp minced garlic
- 1 Tbsp chili powder
- 1 tsp Worcestershire sauce
- 1 tsp lemon juice
- Cooking spray

- 6 lbs tomatoes, washed and core removed
- 1 tsp olive oil
- 1 cup red onion
- 2 cloves of garlic, chopped
