PARMESAN CRUSTED CHICKEN

This chicken is amazingly tender and juicy
- 1/4 cup Hellmann's Mayonnaise
- 1/8 cup grated Parmesan cheese
- 2 boneless, skinless chicken breast halves, (about 1-1/4 lbs./625 g)
- 2 tsp. Italian seasoned dry bread crumbs
DECONSTRUCTED CALI LOBSTER SALAD

1 Drain lobster, squeezing out as much of the absorbed liquid as possible
- 1 can of cooked lobster meat, drained
- Juice of 1/2 a lemon
- 1 tsp seasoned rice wine vinegar
- 1/2 English cucumber, about a 4 inch piece, washed and finely diced
- 1 tbsp sushi ginger, drained, minced
- 2 avocados, halved, pit removed (see TIP)
- VINAIGRETTE
- 2 tsp toasted white sesame seeds
- 1 tsp toasted sesame oil
- 2 tbsp seasoned rice wine vinegar
- 1 tsp ponzu sauce
- 2 tbsp neutral flavored oil such as canola
- 8 cups baby arugula
- Black sesame seeds for garnish
- Caviar or salmon roe (optional)
- 4 tbsp wasabi peas
- PONZU SAUCE
- 1/4 cup low-sodium soy sauce
- 1/4 cup fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 tablespoon water
- 1 tablespoon sweet rice wine
- 1/8 teaspoon crushed red pepper

Easy Chicken Taquitos

You can use canned, drained chicken in place of left overs
- 10 ounce of cooked chicken.
- 1/4 cup shredded Cheddar cheese.
- 5 drops hot pepper sauce (such as Tabasco®)

- 1 tbsp vegetable oil
- 4 green onions,chopped
- 3 carrots, chopped
- 1 potato, peeled and chopped

- 2 tsp (10 mL) mild curry paste
- 2-1/2 cups vegetable stock
- 2-1/2 cups water

- 1/4 cup (50 mL) PC 100% Pure Maple Syrup
- 1/2 tsp (2 mL) ground PC Sea Salt & Black Peppercorn Grinder
- 1 pkg (454 g) PC Rosemary and Garlic Rack of Lamb thawed
- 1/4 cup (50 mL) PC Horseradish Dijon
