Lebanese Cucumber and Yogurt Salad

This is a great Lebanese dip
- 1 cup whole milk yogurt
- 2 mini cucumbers
- 2 cloves garlic
- 1/2 tsp salt
- 1/3 cup water
- 1 tsp dry mint
- drizzle of EVOO
Sicilian Milk Pudding

Place the milk, sugar and corn starch in a saucepan over very low heat
- 1 quart whole milk
- 8 oz granulated sugar
- 3-4 oz corn starch
- 1 cinnamon stick, or a pinch of powdered cinnamon
- few scrapes of lemon or orange zest
- For the toppings
- ground pistachios
- ground or shaved almonds
- powdered cinnamon
- grated or shredded orange or lemon zest
- grated or melted bittersweet chocolate

- 1 cup oats
- 4 cups ice cold water
- 1/4 tsp vanilla extract

In a large mixing bowl, cream the butter and sugar together with an electric or stand mixer, until light and fluffy
- 1 cup unsalted butter, softened
- 1 cup granulated sugar

Sicilian Arancini

In a frying pan, saute the ground beef breaking up the meat into little pieces
- 4 cups cooked rice
- 1 cup fresh grated parmesan cheese
- 4 egg whites
- 4 egg yolks
- 2 cups of seasoned bread crumbs
- 1/2 cup tomato sauce
- 1/2 lb ground beef
- 1 cup mozzarella cheese, shredded
- 1 clove garlic, finely chopped
- 1 cup or peas, cooked
- 1/2 tsp salt
- 1/2 tsp fresh ground black pepper
- 1/2 cup of extra virgin olive oil
Pasta Con Le Sarde (Sicilian Sardine Pasta)

First soak the raisins in a bowl full of warm water
- 13 oz spaghetti or bucatini
- 1/2 lb (225g) sardines deboned, fresh or canned
- 2 anchovies in oil
- 1/2 white onion, medium
- 4 Tbsp evoo
- 1 Tbsp pine nuts
- 2 Tbsp raisins
- 4 Tbsp breadcrumbs or panko
- 2 Tbsp wild fennel, minced and 1/2 tsp fennel fronds
- 2 pinches saffron threads
- 1 dash black pepper
- salt to taste
- 4/5 Tbsp cooking salt for pasta

With an electric mixer, cream the butter (or margarine) and sugar until light and fluffy, 10 minutes
- 1/2 cup butter or margarine (1 stick)
- 1 1/4 cup sugar
- 3 eggs, room temp
- 1 tsp vanilla
- 2 cups sifted a/p flour
- 1 cup preserved (dried) figs, cut into quarters
- 1/8 tsp salt
- 1 tsp baking soda
- 3/4 cup buttermilk
Cod with hearty tomato sauce

You can make this with the sauce recipe
- 2 cans diced tomatoes with italian seasonings, undrained (14and 1/2 oz)
- 4 cod fillets (6oz each)
- 2 Tbsp olive oil, divided
- 2 med white onions, halved and thinly sliced (about 1-1 1/2 cups)
- 1/2 tsp dried oregano
- 1/4 tsp pepper
- 1/4 tsp crushed red pepper flake
- minced fresh parsley, optional
Proper Pesto

Proper pesto sauce is made by hand in a mortar and pestle!!!
- 4 cloves garlic, peeled
- 1/4 tsp kosher salt
- 1 large bunch fresh basil
- 3 Tbsp pine nuts
- 2 oz finely grated parmigiano reggiano (1 1/2 cup unpacked)
- 1/2 cup mild EVOO (i use Partanna)
