Roasted Red Pepper Sauce II

This red pepper sauce is made without cream
- 3 red bell peppers, roasted
- 1 clove garlic
- 2 Tbsp extra virgin olive oil
- 2 Tbsp white balsamic vinegar
- 2 basil sprigs, chopped
- 2 Tbsp parsley, chopped
- salt and pepper, to taste
Dreamsicle Cake

If you like orange dreamsicles, then you will love this cake
- Frosting:
- 13 tbsp butter, room temperature
- 1 1/8 cup sugar
- 3 eggs, room temperature
- 2 1/4 cup flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 2/3 tbsp orange juice concentrate
- 2 tbsp water
- 1/2 cup 2% lowfat milk, plus 1 tsp
- 1/8 cup canola oil
- 1/2 tsp vanilla
- 1/4 tsp orange extract
- 8 oz neufachtel or cream cheese, softened
- 16 oz sifted powder sugar
- 1/4 cup orange juice concentrate
- mandarin oranges
Chinese Pepper Steak

This recipe is Delicious. It is made Paleo with coconut oil and coconut aminos (soy sauce replacement)
- 2 Tbsp coconut oil, OR oil of your choice
- 1 lb cube steak or round steak, grass fed, cut into strips
- 1/2 cup onion, chopped
- 1 clove garlic, minced
- 1 1/2 cups sliced mushrooms
- 1 cup bell peppers, red or green, sliced
- 1/2 tsp Chinese 5 spice powder
- 1 tsp freshly grated ginger
- 1/2 cup broth, beef or chicken
- 2 Tbsp liquid aminos, OR soy sauce
- optional 2 tsp arrowroot starch (for thicker sauce if desired)

To fill a 2 cup Mason Jar, use 1/3 of the following recipe
- 2 1/2 -3 lb meyer lemons, 10-12 total
- 2/3 cup Kosher Salt
- 1/4 cup olive oil
- Makes 6 cups
Sweet Potato Chips Baked

- 1 small sweet potato (8 ounces), peeled and thinly sliced on a mandolin 1/8 inch thick
- 3 Tbsp extra virgin olive oil
- kosher salt and fresh ground pepper
Cheese and Watercress Pie

- 1 lb feta cheese, crumbled
- 1 8oz package cream cheese, softened
- 2 eggs
- 1 bunch watercress, minced
- dash nutmeg
- dash black pepper
- dash sugar
- egg pastry
Kale, Farro and Vegetable Salad

*This recipe yields a pretty Large salad
- 1 small/med red onion, thinly sliced
- 6 Tbsp Champagne OR White Wine vinegar
- 1 1/2 cups farro
- 3 cups water
- either 2 bunches Tuscan Kale OR 8 cups baby kale
- 1 1/2 pints cherry tomatoes, halved
- 1 english cucumber OR 3 persian cucumbers (peeled), cut into half moons
- 1 red bell pepper, seeded and cut into strips
- 12 Tbsp extra virgin olive oil
- salt and pepper, to taste
Amaretti-Stuffed Peaches

1. Preheat the oven to 350 degrees F and lightly grease a 12x10 inch flameproof dish with butter
- 6 ripe peaches
- 2 oz. amaretti cookies, crushed
- 1 egg yolk
- 2 Tbsp superfine sugar
- 1/4 cup ground almonds
- 1 Tbsp amaretto
- 1/4 cup white wine
- 1 tsp superfine sugar, extra
- 1 Tbsp unsalted butter
Potato Cheese Soup - (Silver Palate)

1. Melt the butter in a soup pot
- 4 Tbsp sweet butter
- 2 cups yellow onion, finely chopped
- 2 cups peeled and chopped carrots
- 6 parsley sprigs
- 5 cups chicken stock
- 2 large potatoes, about 1 1/2 pounds, peeled and cubed (3 to 4 cups)
- 1 cup chopped fresh dill
- salt and freshly ground pepper, to taste
- 2 to 3 cups grated good-quality Cheddar Cheese
Vegan Pudding

Place all ingredients into a food processor or blender
- 1 avocado, ripe, medium size
- 1 banana, cut into chunks, medium size
- 1 cup almond milk
- 1 tsp fresh lemon juice
- 1/4 cup cocoa OR vegan protein shake mix (you can add an additional Tbsp or 2 if needed)
