Panelle - Sicilian Chickpea Fritters

This is a classic Sicilian street food, very popular in Sicily and they are delicious
- 1 1/2 cup chickpea flour
- 3 cups water
- 1 tsp kosher or sea salt
- 2 Tbsp chopped parsley
- Vegetable or Canola oil for frying
Vegan veggie stir fry with sauce

Make the sauce: I use a Vitamix
- 1/2 jar of preserved tangerine
- 1/2 jar preserved loquats
- 1 inch fresh ginger root
- 3 garlic cloves
- 1/8 cup soy sauce, to taste
- agave nectar, to taste
- 1/4 cup mirin
- 1/4-1/2 cup peanut or almond butter
- 2-3 Tbsp toasted sesame oil
- oil for frying
- Chop veggies into bite size pieces
- VEGGIES: to your liking
- variety of cabbage, peppers, serrano peppers, carrots, squash, mushrooms and any other veggies you like
Sicilian Seafood Salad

This is an old family Sicilian recipe
- 6-7 frozen lobster tails
- 2 big bags of shrimp, wild caught
- 1 octopus
- Calamari, to your liking
- Canned scongio
- 12 lemons
- 8-10 garlic cloves, minced
- Olive oil, to your liking
- Fresh parsley, 3 bunches, chopped
- 4-6 stalks of celery, sliced
- Salt and pepper, to taste
Almond Anise Biscotti

You can omit the anise for just Almond Biscotti
- 1 cup whole raw almonds
- 2 1/4 cup A/P flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 3 large eggs - room temp
- 1/2 cup olive oil
- 1 Tbsp almond extract
- 1/2 tsp pure vanilla extract
- 1 tsp lemon zest
Roasted Brussels Sprouts with red onion and prosciutto

Preheat the oven to 450 degrees F
- 16 oz Brussels sprouts, cut into halves
- 2 med red onions, but into long strips
- 1/2 cup whole garlic cloves
- 3 slices prosciutto
- 1/2 cup evolution
- Black pepper, to taste
Fruit Granita

This recipe gives you a number of other granita flavor options
- 1 cup sugar
- 5 medium peaches or nectarines or 3 pints blueberries
- 2 Tbsp fresh lemon juice
- For raspberry or blackberry, substitute 6 1/2 pints berries and 2 Tbsp fresh lime juice instead of lemon juice
Chicken Tortilla Soup

1. In a large saucepan, heat the vegetable oil
- 2 Tbsp vegetable oil
- 1 small onion, diced
- 2 Tbsp minced garlic
- 2 jalapeños, finely diced
- 6 cups low-sodium chicken broth
- 1 14.5oz can fire roasted diced tomatoes
- 1 14.5oz can black beans, rinsed and drained
- 3 chicken breasts, boneless & skinless
- 2 limes, juiced, plus wedges for garnish
- salt and fresh ground pepper
- 1 cup roughly chopped fresh cilantro leaves
- 1 8-inch flour tortilla, grilled and cut into thin strips
- 1 avocado, pitted and sliced
- 1 cup shredded Monterey Jack cheese
Cauliflower Gratin

1. Place oven rack in middle of oven, set to 450 degrees
- 1 cup panko bread crumbs
- 1 tbsp olive oil
- 1 1/4 cauliflower florets, cut in 1 inch pieces (2 lb. head)
- 1/4 cup water
- 1 5.2oz pkg Boursin garlic and fine herb cheese
- 1/2 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp pepper
Spaghetti Squash Salad

I created this one evening in the kitchen, with vegetables that were laying around the kitchen
- Vinaigrette:
- 1 spaghetti squash, roasted
- 3 medium to large nopales (cactus paddles), cubed and cooked
- 1 medium red or white onion, diced small
- 1 red, yellow or orange bell pepper OR 5 mini sweet peppers, sliced THIN
- 6 radishes, sliced in half and then sliced THIN
- 1/2 english cucumber, seeded and cubed small
- 1 1/2 cups roasted carrots
- 1/4 cup cilantro, chopped fine
- 1/3 cup olive oil (preferably an evoo infused with heat, like chipotle)
- 3 Tbsp apple cider vinegar
- 1 tsp cumin
- 1 tsp ground ginger
- 2 Tbsp honey
- 1/4 cup cilantro, chopped very fine
- juice of 1 lemon
Paleo Bread

1. Place almond flour, coconut flour, flax, salt and baking soda in a food processor
- 2 cups blanched almond flour
- 2 Tbsp coconut flour
- 1/4 cup golden flax meal
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 5 eggs
- 1 Tbsp coconut oil
- 1 Tbsp honey
- 1 Tbsp apple cider vinegar
