This is a roasted salsa and it is amazing

  • 25 medium jalapeños
  • 1 lg white onion, sliced, not too thick
  • fresh juice of 2 large or 3 small limes
  • zest of 1 large or 2 small limes
  • 2/3 cup apple cider vinegar
  • 1/2 - 2/3 cup water
  • 2 Tbsp mexican oregano, dried
  • 2 Tbsp oil, either olive, sunflower or safflower
  • 2-3 tsp salt, or to taste
  • 4 tsp sugar

  • 1 cup catsup
  • 1/3 cup molasses
  • 1/3 cup brown sugar

  • 1 Tbsp worcestershire sauce
