Jalapeño Salsa

This is a roasted salsa and it is amazing
- 25 medium jalapeños
- 1 lg white onion, sliced, not too thick
- fresh juice of 2 large or 3 small limes
- zest of 1 large or 2 small limes
- 2/3 cup apple cider vinegar
- 1/2 - 2/3 cup water
- 2 Tbsp mexican oregano, dried
- 2 Tbsp oil, either olive, sunflower or safflower
- 2-3 tsp salt, or to taste
- 4 tsp sugar
Clean Eating - Coconut Lime Oat Bars

All natural ingredients make this a very healthy snack choice
- 2 cups Quick Oats, dry roasted in the oven, no oil, 15-20 minutes
- 1 cup peanut butter
- 1/2 cup honey
- 1/2 cup unsweetened Apple Sauce
- 1 cup unsweetened dry coconut flakes
- zest of 2 limes
- juice of 1 lime
Cracked Wheat Salad

1. In a large saucepan, combine water and bulgur
- 4 cups water
- 2 cups bulgur wheat
- 1 cup chopped pecans
- 1 cup dried currants
- 4 Tbsp chopped Italian parsley
- 1 Tbsp best quality olive oil
- grated zest of 1 medium size orange
- salt and freshly ground black pepper, to taste
Won Tons

This recipe yields 50 won tons
- 1/2 lb ground pork, chicken or beef
- 1/2 lb shrimp, shelled deveined and minced
- 1/2 cup minced mushrooms
- 1/2 cup diced water chestnuts
- 2 green onions, finely chopped
- 3 egg yolks
- 2 Tbsp soy sauce
- 3/4 lb won ton wrappers
- Oil for deep frying

Banana Nut Muffins

This recipe makes one dozen regular sized muffins
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1 tsp baking soda
- pinch of salt
- 1 1/2 cup flour
- 1 cup walnuts, chopped
Beer Potato Salad

1. Cook potatoes in skin until tender
- 3 lbs potatoes
- 2 cups diced celery
- 1 small onion, chopped
- salt
- 1 cup mayonnaise
- 2 Tbsp prepared mustard
- 1/4 tsp hot pepper sauce
- 1/2 cup beer
- 2 Tbsp chopped parsley
Miso Dressing

1. In a small bowl, whisk the miso paste into the rice vinegar until smooth
- 1 1/2 Tbsp miso paste
- 2 Tbsp rice vinegar
- 1 1/4 Tbsp honey
- 1 Tbsp minced ginger root
- 1 Tbsp sesame oil
- 1 1/2 tsp lime juice
- 1 tsp toasted sesame seeds
Watercress Soup

- 2 Tbsp butter
- 1 onion, coarsely chopped
- stems from 2 bunches watercress, chopped
- 4 russet potatoes, peeled and quartered
- chicken broth
- salt and pepper to taste
- 1 cup whipping cream
Maple Buttercream Frosting Paleo

1. Beat the shortening or butter until very smooth
- 1 cup palm shortening OR grass fed butter
- 3/4 cup maple syrup
- 2 tsp vanilla
- 1/4 cup coconut milk (optional - makes the frosting fluffy)
BBQ Sauce

1. Heat oil in a saucepan on med-low heat
- 1 Tbsp grape seed oil
- 2 cloves garlic, minced
- 1/2 onion diced
- 1 cup catsup
- 1/3 cup molasses
- 1/3 cup brown sugar
- 4 Tbsp minced chipotle peppers in adobo sauce (you can omit for a milder bbq sauce)
- 4 Tbsp distilled vinegar
- 1 Tbsp worcestershire sauce
- dash salt
