- 1 cup nuts, soaked for 6 hours
- 1 cup almond or cashew yogurt
- 1/2 cup water
- 1 tsp salt
- 3 Tbsp tapioca starch

1. Preheat the oven to 350 degrees F
- 1 1/3 cups pitted dates, roughly chopped
- 1 tsp baking soda
- 1 cup unsalted butter
- 1 1/2 cups self-rising flour
- 1 tsp vanilla
- 1 tsp baking powder
- 3 eggs
- 1/3 cup milk
- 2 Tbsp light brown sugar
- 3/4 cup confectioners sugar
- 3/4 cup chopped walnuts
Green Gazpacho

This recipe is from the Cooking Channel show, Extra Virgin
- 8 oz seedless green grapes
- 3 scallions, roughly chopped
- 1 1/2 English Cucumbers, peeled and cut into small chunks
- 1 clove garlic
- 1 sm fresh parsley, leaves only
- 1/2 lg avocado, cut into chunks
- 1/3 cup extra virgin olive oil (best quality)
- 3 tbsp white wine vinegar (best quality)
- salt and pepper to taste
- 1/4 cup ice water
- 1/4 cup sliced almonds, toasted, for garnish
Cornbread Dressing

Heat oven to 400 degrees Mix ALL breadcrumbs in a large bowl
- 6 cups day old cornbread
- 3 cups day old bread
- 4 oz butter
- 2 cup onion, finely chopped
- 2 cup celery, finely chopped
- 2 cup red bell pepper, finely chopped
- 1-2 cups broth, or as needed
- 1 tbsp (heaping) Sage
- 1 1/2 tsp thyme
- 1 tsp marjoram
- 1/2 tsp rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 2 eggs, lightly beaten
Leeks Vinaigrette

This dish turns into a salad type appetizer, but it's incredibly Delicious
- For the Vinaigrette:
- 4 large eggs
- 8-10 leeks (4-4 1/2 pounds)
- kosher salt
- 2 slices sourdough bread
- 1 Tbsp extra virgin olive oil
- 10-15 yellow celery heart leaves and 2-3 very yellow inner stalks, thinly sliced
- white pepper
- 1/4 cup Dijon mustard
- juice of 1/2 lemon (about 2 Tbsp)
- 2 Tbsp red wine vinegar
- 1 tsp capers, roughly chopped, plus 1 Tbsp of their brine
- kosher salt and white pepper
- 2/3 cup extra virgin olive oil
- 1 small bunch fresh tarragon, leaves finely chopped (about 2 Tbsp)
Chocolate Silk Frosting

This recipe gets thick and fudgy
- 14oz can sweetened condensed milk
- 1/2 cup plus 2 Tbsp heavy cream
- 7 oz bittersweet chocolate (50-70% cacao, depending on your taste)
- 1/2 stick (1/4 cup butter) cubed
- 1 tsp vanilla extract
Au Gratin Potatoes

This is the recipe from the famous Irish Bar, Tom Bergin's Horseshoe Tavern
- 2 1/2 lbs potatoes
- salt
- 1 Tbsp flour
- nutmeg
- 2 Tbsp sherry
- 2 Tbsp evaporated milk
- Grated parmesan cheese
- 1/2 cup shredded cheddar or american cheese
- 4 cups milk
- paprika
- melted butter or margarine
Panforte

1. Line an 8 inch springform pan rice paper or waxed paper and grease well with butter
- 3/4 cup hazelnuts
- 3/4 cup almonds
- 2/3 cup candied citrus peel, chopped
- 2/3 cup candied pineapple, chopped
- grated zest of 1 lemon
- 2/3 cup all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground coriander
- 1 $ tsp ground cloves
- 1/4 tsp grated nutmeg
- pinch of white pepper
- 2/3 cup sugar
- 4 Tbsp honey
- 1/4 cup unsalted butter
- confectioners' sugar, to taste
Linzer Torte - (Silver Palate)

- 1/2 lb plus 4 Tbsp (2 1/2 sticks) sweet butter, at room temperature
- 1 cup granulated sugar
- 1 1/2 tsp grated lemon zest
- 2 eggs
- 1 1/2 cups unbleached all purpose flour
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp salt
- 1 1/4 cups blanched almonds, finely ground
- 2/3 cup raspberry preserves
- confectioner's sugar for dusting top
