Preheat oven to 350 degrees and grease an 11x7 pan 1
- 2 cups flour
- 1 cup water
- 1 cup brown sugar
- 1 cup white sugar
- 1 tsp salt
- 1 tsp vanilla
- 3/4 cup cocoa powder
- 1/2 cup oil, vegetable, sunflower or grape seed
- 1/2 tsp baking powder
- 1/2 cup nuts, chopped *optional
- 1/2 cup vegan chocolate chips *optional

Mix gelatin, 1/2 cup sugar, and salt in saucepan
- 1 cup unflavored gelatin
- 1 cup sugar
- 1/4 tsp salt
- 4 eggs, separated
- 1/2 cup lime juice
- 1 tsp grated lime peel
- 1/3 cup tequila
- 3 Tbsp triple sec liqueur
- 1 (9 inch) baked pastry shell

- 1/4 cup coconut flour
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 3 large eggs
- 1/4 cup honey

1. Mix together cream cheese and pudding mix 2
- 8 oz cream cheese, softened
- 2 (3 1/2 oz) pkg instant pudding mix
- 3/4 cup milk
- 12 oz whip cream (recipe normally calls for cool whip, but I don't eat cool whip...if you use cool whip, just make sure it's thawed)

These bars are very messy and sticky
- 1 cup walnut pieces
- 1 cup peanut halves
- 1 cup dried cranberries, fruit juice sweetened
- 1 cup traditional oats
- 1 tsp ground cinnamon
- 3/4 cup dried coconut
- 1 cup organic brown rice syrup (can use molasses, etc)
- 1/4 cup honey
- 1 tsp vanilla
Asian Cucumber Salad

1. Add very thinly sliced cucumber, sliced red onion, diced red pepper and sesame seeds to a medium size bowl
- 4 cups very thinly sliced seedless cucumbers ( I like Persian Cucumbers)
- 1/4 cup of finely sliced red onion
- 1/4 cup of finely diced red pepper or red jalapeño
- 1/4 cup of rice wine vinegar
- 1 tsp honey
- 1 tsp sesame seeds
- 1/2 tsp toasted sesame oil
- 1/4 tsp red pepper flakes
- 1/2 tsp of sea salt
Oxtail Soup with Red Wine

1. Heat 2-3 Tbsp of the oil in a large pot, over medium heat
- 1/2 cup olive oil
- 3 1/2 lbs meaty oxtails, patted dry
- salt and pepper
- 2 quarts beef or chicken stock
- 3 cups red wine
- bouquet garni
- 2 onions, chopped
- 2 leeks (white and pale green parts only), chopped
- 3 carrots, finely chopped
- 2 parsnips, finely chopped
- 6 cloves garlic, finely chopped
- 1 tsp dried thyme
- 1 bay leaf
- 2 large potatoes, peeled and diced
- 1/2 cup finely chopped flat-leaf parsley

- Frosting Ingredients:
- 1 1/2 cups cake flour
- 1 cup sugar
- 2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup fresh squeezed orange juice (Valencia oranges are the best)
- 1/4 cup vegan margarine (earth balance), softened
- 1/4 cup vegan yogurt, either vanilla, apricot or peach flavor
- 1/3 cup applesauce
- 1 Tbsp orange extract
- 1 tsp vanilla extract
- 2 cups powder sugar
- 1 cup vegan margarine (earth balance)
- 1/4 cup vegan shortening
- 1/2 tsp vanilla extract
- 2 tsp orange extract
- fresh juice of 1/2 small valencia orange
- 1-2 Tbsp orange zest, optional
Baked Salmon with Dill Sauce

Try to use wild Salmon or Sockeye Salmon
- Dill Sauce:
- 1 Salmon fillet (about 2 pounds)
- 1 -1 1/2 tsp lemon pepper
- 1 tsp onion salt
- 1 small onion, sliced and separated into rings
- 6 lemon slices
- 1/4 cup butter, cubed
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 Tbsp finely chopped onion
- 1 tsp lemon juice
- 1 tsp prepared horseradish
- 3/4 tsp dill weed
- 1/4 tsp garlic salt
- pepper to taste
