Carbonara Pasta II - (Silver Palate)

Authentic Italian version would use pancetta
- 1 lb. thick sliced bacon, diced
- 2 Tbsp salt
- 1 pound spaghetti, linguine, or pasta of preference
- 3 eggs
- 1/2 cup chopped Italian parsley
- grated imported Parmesan cheese *optional
- freshly ground black pepper to taste
Cauliflower (Roasted) Soup with Cumin

1. Preheat the oven to 375 degrees
- 1 medium head of cauliflower, 1 1/2 lbs-halved, cored and cut into 1 1/2 inch florets
- 1 tsp cumin seeds
- 1 tsp curry powder
- 1/4 cup sunflower or grape see oil
- kosher salt and fresh ground pepper
- 1 small onion, diced (1 cup)
- 3 Tbsp unsalted butter
- 1 bay leaf
- 4 cups water
- 1/4 cup whole milk
Lebanese Cabbage Salad

1. Cut the cabbage in half
- Lebanese lemon salad dressing:
- 1 lb green cabbage
- 2 tomatoes, plum, seeded and chopped
- 1/3 cup parsley, finely chopped
- 1/3 cup scallion, diced (white and green parts)
- 1/4 cup fresh lemon juice
- 1/4 cup extra virgin olive oil
- 1 1/2 cloves garlic, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper, or to taste
Mushroom Soup with Chicken Wontons

1. Make the wontons: Combine the chicken, ginger, cilantro, soy sauce and sesame seeds
- For the Soup:
- 2 oz dried shitake mushrooms
- 1 Tbsp olive oil
- 1 tsp sesame oil
- 1 large onion, finely chopped
- 2 stalks celery, finely chopped
- 2 cloves garlic, crushed
- 4 oz button mushrooms, sliced
- 4 cups chicken stock
- 5 oz oyster mushrooms
- 4 oz snow peas, cut into strips
- 4 spring onions, chopped
- 1/4 cup dry sherry
- 1 Tbsp soy sauce
- extra spring onions, sliced
- FOR THE WONTONS:
- 2/3 lb minced chicken
- 1 tsp grated fresh ginger
- 1 Tbsp finely chopped fresh cilantro
- 2 tsp soy sauce
- 1 tsp toasted sesame seeds
- 7 oz wonton wrappers
Pecan and Coffee Biscotti

This recipe will yield 40 biscotti
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 2/3 cup superfine sugar
- 1/4 cup unsalted butter
- 2 eggs
- 1/2 tsp vanilla extract
- 2 Tbsp instant coffe granules
- 1 1/3 cup pecans
- 1/2 tsp superfine sugar, extra
Chocolate Cinnamon Crackled Cookies

This recipe yields 3 1/2 dozen cookies
- 12 oz semi-sweet baking chocolate, divided
- 3/4 cup flour
- 2 tsp roasted saigon cinnamon
- 1 tsp ancho chile pepper
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup (1/2 stick) butter, softened
- 1/2 cup granulated sugar
- 1/4 cup firmly packed brown sugar
- 2 eggs, lightly beaten
- 2 tsp pure vanilla extract
Almond, Orange and Cardamom Biscotti

- 2 eggs
- 2/3 cup firmly packed soft brown sugar
- 1 cup self-rising flour
- 1 1/4 cups almonds
- 1 Tbsp finely grated orange zest
- 1/4 tsp ground cardamom

1. In a medium bowl, mix together the ground beef, 4 Tbsp of parsley, the parmesan, raisins, bread crumb, egg, hal...
- 1/2 lb ground beef
- 5 Tbsp chopped fresh parsley
- 1/4 cup Parmesan, plus more for serving
- 2 Tbsp raisins
- 2 Tbsp dry bread crumbs
- 1 egg, beaten
- 5 cloves garlic, minced
- 2 1/2 tsp salt
- 1/2 tsp fresh ground black pepper
- 2 Tbsp olive oil
- 2 carrots, cut into 1/4 inch dice
- 1 onion, chopped
- 2 ribs celery, cut into 1/4 inch dice
- 1 zucchini, cut into 1/4 inch dice
- 1 1/2 quarts chicken broth or homemade stock
- 1 cup canned crushed tomatoes in thick puree
- 1/2 tsp dried rosemary OR 2 tsp chopped fresh rosemary
- 1 cup small pasta shells or other small macaroni
Chipotle Chicken Chili

1. In a large, heavy pot, cook bacon over medium heat until crisp
- 2 bacon slices, chopped
- 1 lb boneless, skinless chicken breasts, but into 1 inch pieces
- 1 small onion, chopped
- 1 14oz can low-sodium, fat free chicken broth
- 3 14.5 oz cans diced tomatoes with green chiles, undrained
- 1 15oz can black beans, rinsed and drained
- 1/2 tsp chipotle seasoning OR 1-3 chipotle peppers (heat to your liking)
- 4 oz shredded sharp cheddar cheese (1 cup)
- Sour Cream and sliced Jalapeno optional
