Clean Eating - Cinnamon Chocolate Chip Protein Bars

Preheat oven to 350 degrees 1
- 2 cups rolled oats, roasted in oven, no oil, 10-15 minutes
- 1 cup peanut butter
- 1/2 cup honey
- 1/2 cup unsweetened apple sauce
- 2 tbsp grain sweetened chocolate chips
- 1 cup whey protein powder
- 1 tbsp cinnamon
- 2 tbsp chia seeds
Tomatillo Smoky Salsa

1. Preheat the oven to 500 degrees
- 2 tomatillos, husked and rinsed
- 1 medium tomato
- 1/2 medium onion
- 1 serrano chile, stemmed
- 1 Tbsp extra virgin olive oil
- 2 large dried chipotle chiles, stemmed and seeded
- Hot Water
- 1 cup cilantro, lightly packed
- 3 Tbsp fresh lime juice
- kosher salt
Gingerbread Cake

This is a great glazed cake and is always a hit at the holidays
- Cake:
- 1 cup raisins
- 1 cup molasses
- 1/2 cup brown sugar, packed
- 1/3 cup each; strong brewed coffee
- orange juice
- canola oil (or substitute sunflower oil)
- 3 eggs
- 3 cups whole wheat flour
- 1/4 cup nonfat dry milk powder
- 1 Tbsp ground ginger
- 1 Tbsp grated orange peel
- 1 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp each; ground nutmeg
- ground cinnamon
- ground mace
- Glaze:
- 2 1/2 cups confectioners' sugar
- 4 Tbsp milk
- 2 Tbsp butter, melted
- 1/4 tsp vanilla extract
Blueberry Bliss Bars

- 2 cups creamed coconut (you could possibly substitute coconut butter)
- 2 cups fresh blueberries
- 1/4 cup pure maple syrup
- 2 tsp ground vanilla beans

- 1 cup unsalted pistachio nuts
- 1/2 tsp ground cardamom
- 2/3 cup unsalted butter, chopped
- 1 1/2 cups self-rising flour
- 1 14 cups superfine sugar
- 3 eggs
- 1/2 cup plain yogurt
- 1 lime
Lemon Zest Crinkle Cookies - Paradise Bakery

This is an imitation of the famous Lemon Zester cookie, from Paradise Bakery
- 1 1/2 cups white whole wheat flour
- 1/4 tsp baking soda
- dash salt
- zest of 1 lemon
- 3/4 cup sugar
- 3 Tbsp coconut oil, melted
- 5 tbsp nonfat lemon greek yogurt (plain is fine if no lemon available)
- 1 tsp vanilla
- 1 egg, room temperature
- 1 Tbsp lemon juice
- 1/4 cup powdered sugar
Paleo Sunflower or Almond Butter Bark

The base of this bark is coconut oil
- 1 cup coconut oil, softened
- 1/4 cup sugar-free sunflower seed butter, or almond or cashew butter
- 2 tsp pure maple syrup (you can use raw honey)
- 1/2 tsp pure vanilla extract
- pinch sea salt
- 1 oz dark chocolate, chopped fine (you can use as much or little chocolate as you like)

- 2 cups dry garbanzo beans, soaked overnight (this is 6 cups soaked and cooked garbanzo beans)
- 1/2 tsp baking soda (for traditional method)
- 4 heaping Tbsp tahini (Ziyad is the best)
- 3 cloves of garlic
- 1/2 cup lemon juice
- 1/2 tsp salt
- 2 Tbsp olive oil (optional)
New England Clam Chowder

This Chowder is made with all fresh ingredients
- 5 lbs littleneck clams, well scrubbed with a brush under cold water
- 4 oz thick-cut bacon, cut into 1/4 inch pieces
- 2 tsp Aleppo pepper or other smoky dried pepper
- 2 Tbsp unsalted butter
- 2 celery stalks, sliced into 1/2 inch pieces
- kosher salt
- 2 small, thin leeks (white and light green part only), diced and well washed
- 2 garlic cloves, minced
- 1 cup dry vermouth
- 4 medium Yukon Gold potatoes (1 pound total), cut into 1/2 inch cubes
- 2 cups heavy cream, plus more if needed
- 2 bay leaves

You have to be drinking with your friend to get into a quarrel over who makes the best Greek Salad Dressing, LOL
- 1/2 cup extra virgin olive oil
- 2 Tbsp red wine vinegar (use quality red wine vinegar in all salad dressings you make)
- small squirt of dijon mustard
- 1/2 tsp each, Oregano and Marjoram
- salt and pepper to taste
- 1 clove garlic, crushed
- 1/2 - 1 tsp lemon juice, to your taste
