Tomatillo Chipotle Salsa

This is one of the best table salsas that I have had
- 12 about 12 tomatillos, husked washed and dried
- 2 roma tomatoes, (8 ounces)
- 1/2 white onion, peeled but with root end intact
- 3 jalapeños ****optional, if you want more spicy heat in your salsa
- 6 cloves garlic, unpeeled
- 1/4 cup chipotles in adobo
- 2 tsp salt
- 1/2 bunch cilantro, roughly chopped
Sweet Chile Pineapple Fish

Pre-heat large sautee pan on medium high heat, 2-3 minutes
- 4 fillets of fish, Tilapia, Striped Bass, etc, Coat in olive oil
- 1/4 c + 2 tsp low sodium teriyaki sauce
- 1/4 cup green onion, thinly sliced
- 1 8oz can crushed pineapple
- 1/2 cup water
- 3 tbsp pineapple preserves
- 3 tbsp Asian sweet chile sauce or SriRacha
Cream of Tomato Soup with Acini di Pepe

A delicious creamy tomato soup
- 1/3 cup Acini di Pepe (about 1 cup cooked)
- 2 tbsp butter
- 1 small onion, diced
- 1 carrot, diced
- 1 14.5oz can crushed tomatoes (You can use 2 cans if you want more tomato)
- 1/2 tbsp Italian Seasoning
- 2 cups chicken broth
- 1 cup heavy cream
- salt and pepper to taste
Potstickers - Dumplings

I learned how to make potstickers (Dumplings) from a wonderful family friend
- Gyoza Skins
- Napa Cabbage, 7-8 stalks, center stalk removed, finely chop the cabbage leaves
- Shitake Mushrooms, 5-6, remove stem, finely chop
- Green Onions, 2 stalks, cut both ends and finely chop
- Fresh Ginger 1 1/2 inch, grated
- Ground Beef, Very lean, (93 or 96% lean), 2/3 pound
- Soy Sauce, 2 Tsp
- Sesame Oil, 1-2 Tbsp
- Mixture of Corn Starch and Water, 1 tsp corn starch, 2 Tbsp water, mix until dissolved
Macaroni Salad II

1. Cook the macaroni 2. Blend the warm macaroni with oil, vinegar, salt and pepper and toss lightly
- 2 cups warm cooked macaroni
- 3 Tbsp oil
- 1 Tbsp vinegar
- 1 tsp salt
- 1/8 tsp black pepper
- 1/2 cup pitted black olives
- 3/4 cup diced cucumber
- 3/4 cup diced celery
- 2 green onions, thinly sliced
- 1/4 cup diced sweet pickle
- 1/4 cup diced pimiento
- 1/2 cup mayonnaise
Orzo salad

I use wheat or grain pasta for this recipe
- 2 1/2 cups uncooked whole wheat orzo (about 1 pound)
- 1 15-oz can cannellini beans
- 3 med tomatoes, finely chopped
- 1 English cucumber, finely chopped
- 2 cups (8 oz) crumbled feta cheese
- 1 1/4 cups Greek olives, pitted and chopped
- 1 med green bell pepper, finely chopped
- 1 med yellow or red bell pepper, finely chopped
- 1 cup fresh mint leaves, finely chopped
- 1/2 med red onion, finely chopped
- 1/4 cup lemon juice
- 2 Tbsp olive oil
- 1 Tbsp grated lemon peel
- 3 garlic cloves, minced
- 1/2 tsp pepper
Rice Costrada

- For the Rice:
- 1/2 large white onion, sliced
- 3 garlic cloves, peeled
- 2 jalapeños, whole
- 2 Tbsp oil
- 1 1/2 tsp saffron
- 2 cup rice, preferably medium grain
- salt
- 1/2 cup sugar, divided use
- 7 eggs
- 1/4 cup unsalted butter (4 Tbsp, 2 oz)
- For the Picadillo:
- 2 Tbsp oil
- 1/2 large white onion, chopped
- 1/2 of a large red bell pepper, chopped
- 1 lb ground beef or pork, or a combination of the two
- 1/4 tsp fresh ground black pepper
- 1/8 tsp ground cloves
- 1/8 tsp ground cinnamon, preferably Mexican canela
- 1 Tbsp raisins, roughly chopped
- 2 Tbsp slivered almonds
- 1 garlic clove, peeled and chopped
- 1 lb red ripe tomatoes (4-5 medium plum or 1-2 med-large round), cored and chopped
- 1 Tbsp parsley, coarsely chopped, loosely packed
- 1/3 cup chopped olives, preferably Manzanilla
- 1 Tbsp capers, finely chopped
- 2 Tbsp sweet sherry
- 1 tsp sugar
- 2 Tbsp apple cider vinegar
- Salt
Sweet Potato Pie

You can also do a version of this with half sweet potato and half butternut squash
- Pie pastry for 9 inch pie
- 4 eggs
- 1 1/3 cups half and half
- 2 cups mashed cooked sweet potato (sub 1/2 squash/potato OR all squash)
- 1/2 cup honey
- 1 Tbsp all purpose flour
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- dash ground cloves
P.F. Chang's Lettuce Wraps with Chicken

DIRECTIONS: Cook chicken in a large skillet over medium heat, stirring often to break up the meat
- 16 lettuce leaves, Bibb/Butter lettuce is best, iceberg will work
- 1 poundground chicken
- 1 large onion, chopped
- 2 tbsp garlic, minced
- 1 tbsp soy sauce
- 1/4 cup hoisin sauce
- 2 tsp fresh ginger, minced
- 1 tbsp rice wine vinegar OR red wine vinegar
- 2 tsp chili pepper sauce (Sriracha)
- 1 8oz can water chestnuts, finely chopped
- 1 bunch green onions, sliced thin
- 2 tsp asian sesame oil
Carmelized Carrots with Quinoa

This dish is best served warm
- FOR THE DRESSING:
- 2 Tbsp Olive Oil
- 2 pounds carrots (peeled and cut into 1/2 cut on bias)
- Salt and fresh ground pepper
- 1/2 tsp cinnamon, ground
- 1 tsp cumin, ground
- 1/4 tsp coriander, ground
- 2 scallions (sliced on bias)
- 1/4 cup goat cheese, crumbled
- 1/4 cup dried cherries
- 1 cup dry Red Quinoa
- toasted pumpkin seeds, to garnish
- 1/2 orange, juiced
- 2 Tbsp red wine vinegar
- 1 Tbsp dijon mustard
- 1 Tbsp real maple syrup
- 1/2 cup Olive Oil
- Salt and fresh ground pepper
