Vegan Cheese

Vegan Cheese is made with nuts
- 1 cup nuts, soaked for 6 hours (Cashews, Almonds, Hazelnuts, Brazil Nuts and more, will work
- 1 cup almond or cashew yogurt
- 1/2 cup water
- 1 tsp salt
- 3 Tbsp tapioca starch
- 1 Tbsp agar
Asian Sticky BBQ Chicken Wings and Drumsticks

- 800 g mixed chicken wings and drumsticks
- 6 squidges of catsup
- 3 Tbsp balsamic vinegar
- 3 Tbsp soy sauce
- 2 Tbsp chinese five spice powder
- 2 squidges of honey
- 1 garlic clove
- few sprigs of fresh thyme
- sunflower oil
Zuppa Toscana Soup

This is the classic tuscan sausage and cream soup
- 1 pound ground italian sausage
- 1 1/2 tsp crushed red peppers
- 1 large white onion, diced
- 4 tbsp bacon pieces
- 2 tsp garlic, crushed
- 10 cups water
- 5 cubes chicken bouillon
- 1 cup heavy cream
- 1 pound potatoes sliced, russet, fingerling, gold, red, they all work
- 1/4 of bunch of fresh kale
Carrot and Orange Soup - (Silver Palate)

From the old Silver Palate shop in Manhattan, this was one of their most popular soups
- 4 Tbsp sweet butter
- 2 cups finely chopped yellow onion
- 12 large carrots, 1 1/2-2 lbs, peeled and chopped
- 4 cups chicken stock *(you can substitute veggie stock)
- 1 cup fresh orange juice
- salt and freshly ground black pepper, to taste
- grated fresh orange zest to taste
Hungarian Cheesecake

1. Sift together the flour and baking powder, set aside
- Crust:
- 1 1/2 cups unbleached all purpose flour
- 1 tsp baking powder
- 4 Tbsp butter, room temperature
- 2 large egg yolks, lightly beaten
- 1/8 tsp salt
- 1 Tbsp lemon juice
- 4 Tbsp water
- Cheesecake:
- 2 cups cottage cheese
- 4 large eggs
- 1/4 cups sugar
- 1 tsp fresh lemon peel
- 1 cup sour cream
- 1 cup crushed pineapple
- 1/2 cup raisins
Pasta Rollatini with Spinach and Ricotta

- Pasta:
- 1 cup cake flour
- 1/2 cup all purpose flour, plus extra for dusting
- 2 egg yolks
- 2 Tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- 1/4-1/2 cup water, plus extra, as needed
- Filling:
- 12 oz frozen spinach, thawed and drained
- 3 oz thinly sliced prosciutto, finely chopped
- 1/2 cup whole milk ricotta cheese
- 1/3 cup grated Parmesan
- 1 egg yolk
- 2 Tbsp extra virgin olive oil
- 1 Tbsp unsalted butter, chopped, room temperature
- 3 Tbsp grated parmesan
- 2 cups warm tomato marinara sauce
- Extra: 2 double layer thick pieces of cheesecloth, each piece 8x16 inches in size,
- 4 (6 inch) pieces kitchen twine

- 1 (1 lb) can cream style corn
- 3/4 cup milk
- 1/3 cup shortening
- 2 eggs, lightly beaten
- 1 cup cornmeal
- 1/2 tsp soda
- 1 tsp baking powder
- 1 tsp salt
- 1 (4 oz) can diced green chiles, drained
- 1 1/2 cups shredded cheddar cheese
Paella

Use a paellero for the Paella
- 2 cups chicken, cooked and cut in 1-1 1/2 inch pieces
- 4 cups chicken stock
- 1/4 cup olive oil
- 1/2 cup thinly sliced onions
- 2 cups rice
- up to 2 tsp saffron
- 2 garlic cloves, crushed
- 2 red bell peppers, sliced, seeds and membrane removed
- 1-2 tsp paprika *I use smoked paprika
- 1/4 tsp oregano
- Chorizo or hard Spanish sausage, thinly sliced
- Large/Giant Shrimp, raw
- Clams, in their shells, scrubbed well
- Mussels, in their shells, scrubbed well
Guacamole

Mash the avocado, lime juice and salt
- 3 avocado
- 1 lime, juiced
- 1 tsp salt
- 1/2 cup onion, diced
- 3 Tbsp cilantro, chopped
- 2 roma tomatoes, diced
- 1 tsp garlic, minced
- 1 pinch cayenne, optional
Potato Salad

The use of dry mustard gives this potato salad a great "bite" to it
- 3 lb. small white potatoes ( I actually prefer yukon gold)
- kosher salt
- 1 cup mayonnaise
- 1/4 cup buttermilk
- 2 Tbsp dijon mustard
- 2 Tbsp dry mustard
- 1/2 cup chopped fresh Dill
- fresh ground black pepper
- 1/2 cup celery, chopped
- 1/2 cup red onion, chopped
