Pecan Raisin Bread

This is a basic, yeasted white bread recipe, then adding the pecans and raisins
- 1 cup milk
- 2 Tbsp butter
- 1/2 cup warm water
- 2 pkgs active dry yeast
- 2 Tbsp sugar
- 1 Tbsp salt
- 1 cup warm water
- 6-7 cups unbleached flour
- 2 cups pecans (whole or chopped)
- 1 1/2 cups raisins
Waldorf Rice Pudding

Place milk, half & half, rice sugar and salt in Large pot to boil
- 1/2 gallon whole milk
- 1/2 gallon half and half
- 2 cups Carolina Long Grain Rice
- 2 cups sugar
- 1 tsp salt
- 4 eggs
- 3 tsp vanilla
Clam Chowder

Fry bacon and onions in a large kettle until just brown
- 6-8 slices bacon, cut into 1/4 inch strips
- 3 large white onions, sliced and quartered
- 4 potatoes, peeled and diced
- 1 (6 1/2oz) can minced clams
- 1 (6 1/2oz) can chopped clams
- 2 quarts milk
- 2 tsp worcestershire sauce
- 1 Tbsp butter or margarine
- salt and pepper, to taste
- chopped parsley
Pistachio Cake

This recipe was given to me by a cousin
- 1 box yellow cake mix
- 1 1/2 tsp almond extract
- 1 box pistachio instant pudding
- 4 eggs
- 1 1/4 cup water
- 1/4 cup oil
- Pistachio nuts, chopped (You can add a reasonable amount you like to both the cake and the topping)
- Frost with either whipped cream or frosting of your choice
Meringue

Beat egg whites until frothy
- for more meringue or "higher" topping use:
- 2 egg whites
- 4 Tbsp sugar
- 1/2 tsp vanilla
- 3 egg whites
- 6 Tbsp sugar
- 1 tsp vanilla
Mayonnaise Sesame (for asparagus)

- 1 whole egg
- 2 egg yolks
- 2 1/2 Tbsp rice vinegar
- 2 1/2 Tbsp Oriental soy sauce
- 3 Tbsp dijon mustard
- 1/4 cup dark oriental sesame seed oil
- 2 1/2 cups corn oil
- szechuan-style hot and spicy oil *optional
- grated fresh orange rind *optional
German Chocolate Cheesecake

Preheat oven to 350 degrees
- Filling:
- 4 bars semi-sweet baking cholocate, broken into pieces
- 3 8oz pkg cream cheese, room temp
- 3/4 cup sugar
- 1/2 cup sour cream
- 2 tsp vanilla
- 2 tbsp all purpose flour
- 3 eggs, room temp
- Crust:
- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 1/3 cup butter
- 1/4 cup flaked coconut
- 1/4 cup pecans, chopped
- Topping:
- 1/2 cup butter
- 1/4 cup light brown sugar
- 2 tbsp light cream
- 2 tbsp light corn syrup
- 1 cup flaked coconut
- 1/2 cup pecans, chopped
- 1 tsp vanilla
Fish Stew

This is a very tasty stew and you can use just about any kind of seafood in it
- 6 Tbsp olive oil
- 1 cup onion, chopped
- 2 large garlic cloves, chopped
- 2/3 cup fresh parsley
- 1 cup fresh tomato, chopped
- 2 tsp tomato paste
- 8 oz clam juice
- 1/2 cup dry white wine (sauvignon blanc)
- 1 1/2 pound fish fillet, cut into 2 inch pieces (cod, sole, sea bass, snapper, halibut, etc)
- touch of dry oregano, tabasco, thyme, salt and pepper

- 1 lb dried large white beans, such as great northern, rinsed and picked through
- 8 cups low sodium broth, vegetable or chicken
- 1 onion, peeled and finely chopped
- 2 carrots, peeled and finely chopped
- 2 ribs celery, finely chopped
- 6 cloves garlic, finely chopped
- 8 sprigs fresh thyme
- 1 bay leaf
- parmesan rind (optional)
- 1 lb sweet or spicy italian sausage, casings removed, shaped into 1/2 in meatballs
- 1 bunch spinach, trimmed
- juice of 1/2 a lemon
Quiche Chile Relleno Style

The recipe calls for can chopped green chilies
- Pie pastry for single crust pie, 9 inch
- 2 Tbsp cornmeal
- 1 1/2 cups shredded monterey jack cheese (6oz)
- 1 cup shredded cheddar cheese (4oz)
- 1 4oz can chopped green chilies OR sub with diced fresh poblano chili
- 3 eggs
- 3/4 cup sour cream
- 1 Tbsp fresh cilantro, minced
- 2 to 4 drops hot pepper sauce, *optional*
