Curried Carrot Soup

1. Heat the oil in a saucepan and add the curry powder, onion and ginger
- 1 Tbsp vegetable oil
- 1-2 tsp curry powder
- 1 onion, finely chopped
- 1 Tbsp chopped fresh ginger
- 1 lb carrots, peeled and thinly sliced
- 4 cups chicken or vegetable stock
- 2 Tbsp lemon juice
- salt and freshly ground black pepper
- yogurt, to serve
- 1/2 cup chopped fresh parsley or cilantro
Mocha Buttercream Frosting Paleo

1. Beat the butter OR shortening until very smooth
- 8 Tbsp grass fed butter (1 stick) OR palm shortening, room temp
- 3 Tbsp raw honey
- 1 Tbsp cocoa powder
- tiny pinch salt
- 1/4 tsp vanilla
- 1/2 tsp fine ground coffee
Candied Jalapenos

These are absolutely delicious!!! They do take some time however
- 4 Jalapeños, cut into rings (you can candy as many as you want though)
- 1 cup granulated sugar
- 1-2 cups water (I usually go 1:1 ratio, sugar:water)
- If you use both green and red jalapeños, they make a great dish for a christmas party
Jalapeno Corn Muffins

These are not as hot as you would think
- 1 1/2 cup yellow cornmeal
- 1 1/4 cup all-purpose flour
- 2 Tbsp sugar
- 1 Tbsp baking powder
- 1 tsp salt
- 1 tsp ground cumin
- 2 eggs
- 1 cup fat-free milk
- 3 Tbsp butter, melted
- 2 Tbsp cilantro, minced
- 1 (8 3/4oz) can corn or frozen corn (defrosted)
- 1/2 cup chopped sweet red pepper
- 1/2 cup chopped seeded jalapeno peppers
Chocolate Buttercream Frosting

1. Add cocoa to a large bowl or bowl of stand mixer
- 1 1/2 cups butter (3 sticks), softened *Use high quality butter, like Kerrygold for best results
- 1 cup unsweetened cocoa *try Special Dark cocoa for a great frosting flavor
- 5 cups confectioner's sugar
- 1/2 cup milk
- 2 tsp vanilla extract
- 1/2 tsp espresso powder
Carnitas - in the Slow Cooker

1. In a 3 quart slow cooker, combine pork, lime juice, salt, pepper and pepper flakes
- 1 boneless pork shoulder butt roast or loin roast, 2-3 pounds, cut into cubes
- 1/2 cup lime juice
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp crushed red pepper flakes
- 12 flour tortillas, 6 in, warmed
- 2 cups shredded cheddar or monterey jack cheese, 8 oz
- 2 medium avocados, peeled and diced
- shredded lettuce
- fresh cilantro, minced
- salsa
Miso Sesame Sauce

This sauce is great on chicken, fish and veggies
- 2 Tbsp miso paste
- 2 Tbsp toasted sesame seeds, ground
- 1 Tbsp yuzu or lemon juice
- 1 Tbsp water
Arancini di Riso #2

This recipe will take you 1 1/2 hours of total time
- Rice Mixture:
- 1 med bag of rice (the cheaper the better, like Uncle Ben's)
- 1 pkg saffron
- 2 cartons of chicken stock
- 1 1/2 cups of grated romano cheese
- 1 stick softened butter
- 6 egg yolks
- Filling:
- 1 lb ground beef
- 1 small can tomato paste
- 1 large onion, chopped
- 1 bag/box frozen peas, thawed
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp sugar
- Outside:
- Italian style breadcrumbs
- 6 egg whites + 2 Tbsp water
- Oil for deep frying
Yellow Cupcakes Paleo

Preheat oven to 350 degrees and prep cupcake tins
- 1/2 cup coconut flour, sifted
- 5 large eggs
- 1/3 cup grass fed butter OR coconut oil, melted
- 1 tsp vanilla
- 1/4 cup maple syrup OR raw honey
- 1 cup applesauce
- 1 tsp baking soda
- 1 tsp baking powder

- 1 cup of rice (i prefer long grain)
- 4 cups milk
- 4 Tbsp sugar

- stick of cinnamon
- 1 egg
- 3/4 cup milk
