Steak Diane

Trim steaks of fat and any gristle, then cut each into quarters
- TRIM:
- Once the cooking begins, steak Diane really moves fast, so assemble the ingredients for the sauce before cooking the steak. Combine the broth and mustard, chop the shallots and parsley, and have the lemon juice squeezed and on hand.
- 2 ribeye steaks (12 oz. each)2
- 1 tsp. soy sauce1 tsp.
- Vegetable oil
- WHISK:
- 1 ⁄2 cup beef broth
- 1 Tbsp. Dijon mustard
- HEAT:
- 4 Tbsp. unsalted butter, divided
- 2 tsp. vegetable oil
- 2 Tbsp. finely minced shallots
- 1 Tbsp. chopped fresh parsley
- 1 tsp. Worcestershire sauce
- 1 ⁄2 tsp. fresh lemon juice
- Salt and black pepper
Country Barbecued Chicken Recipe

In a small bowl, combine the first seven ingredients
- 3/4 cup ketchup
- 1 tablespoon molasses
- 2 teaspoons brown sugar
- 1 teaspoon chili powder
- 1 teaspoon canola oil
- 1/2 teaspoon Worcestershire sauce
- 1 garlic clove, minced
- 1-1/2 to 2 pounds boneless skinless chicken breast halves
- 2 tablespoons butter, melted
Pork Chops Yum-Yum

Brown chops on both sides
- 2 -4 pork chops, 1/2 inch to 3/4 inch thick
- 1/4 cup chicken broth
- 1/8 cup honey
- 1/8 cup soy sauce
- 1 tablespoon ketchup
- 1/4 teaspoon ginger
- 1/8 teaspoon garlic salt
Creamy Shrimp Alfredo Pasta Recipe

Instructions Cook ¾ lb fettuccini noodles in salted water according to package instructions and drain
- 3/4 lb fettuccine or penne pasta
- 1 lb shrimp, peeled and deveined
- 1 Tbsp oil
- 1 small onion, finely chopped
- 2 Tbsp butter
- 1 garlic clove
- 1/3 cup white wine (I used Ste Chapelle Chardonay ~$6)
- 2 cups heavy whipping cream
- 1/3 cup parmesan cheese
- S&P to taste
- Sprinkle
- Parsley or basil for garnish if desired
Nigel's spaghetti bolognese

Make a big batch of Nigel's classic bolognese recipe and stash half in the freezer for a quick supper
- 50 g/1 3/4 oz butter
- 70 g/2 1/2 oz pancetta
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 carrot, finely chopped
- 2 celery stalks, finely chopped
- 2 large mushrooms, finely chopped
- 2 bay leaves
- 400 g/14oz minced beef or lamb
- 200 ml/7fl oz whole milk
- 220 ml/7 3/4fl oz crushed tomatoes or passata
- 200 ml/7fl oz red wine
- 200 ml/7fl oz vegetable stock
- pinch freshly ground nutmeg
- spaghetti or tagliatelle, cooked according to packet instructions
- grated parmesan cheese, to serve
No-Bake Salad Pizza

Spread spinach dip evenly over pizza crust to within 1/2 inch of edge
- 1 cup spinach dip
- 1 package (10 oz) prebaked thin Italian pizza crust (12 inch)
- 1 cup coarsely chopped fresh broccoli
- 1 cup cubed cooked chicken
- 3 tablespoons sliced green onions (3 medium)
- 1 small tomato, seeded, chopped (1/2 cup)
