Start making the marinara sauce
- Frank's Marinara Sauce (See below)
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1/2 lb. ground veal
- 1 Tbs. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 clove garlic, minced, plus 1 clove garlic, lightly smashed
- 2 large eggs, lightly beaten
- 1 cup finely grated imported Locatelli Romano or Parmigiano Reggiano (or half and half); more for serving
- 1-1/2 cups plain dry breadcrumbs, preferably 4C brand
- 1 Tbs. chopped fresh flat-leaf parsley
- 1 cup olive oil or vegetable oil; moreĀ as needed
- 1 lb. dried spaghetti
- 1/4 cup chopped fresh basil
Chicken Enchilada Pasta

1. Preheat oven to 350 degrees F
- 1 12 ounce package dried jumbo shell macaroni
- 3 3/4 cups chopped large green and/or red sweet peppers (3 large)
- 1 1/2 cups chopped red onions (3 medium)
- 1 fresh jalapeno chile pepper, seeded and chopped*
- 2 tablespoons vegetable oil
- 2 cups chopped cooked chicken
- 1 16 ounce can refried beans
- 1/2 1 1/4 ounce package taco seasoning mix (3 tablespoons)
- 2 10 ounce can enchilada sauce
- 1/4 teaspoon salt
- 2 cups shredded Mexican-style four-cheese blend (8 ounces)
- 1 cup sliced green onions
- 2 cups nacho-flavor tortilla chips, crushed
- Sour cream

Maple Sugar-Ginger Roast Pork

- 2 tbsp balsamic vinegar
- 1/2 tsp black pepper
- 1/2 tsp salt
- 4 tbsp hot sauce (more or less to taste)
- 4 tbsp Worcestershire sauce
- 1 tbsp dry mustard powder
- 1 tsp ground ginger
