- 1 (16-ounce) jar southwest salsa (has corn, black beans, onions, tomatoes, chiles)
- 4 cups beef broth
- 1 (15-ounce) can garbanzo beans, drained and rinsed
- 1 cup baby carrots, or chopped carrot
Southwestern Winter Squash Soup from Food Network Kitchen

Preheat the oven to 425 degrees F
- Assorted toppings:
- 2 medium kabocha or butternut squash (about 4 pounds)
- 2 tablespoons plus 1 teaspoon extra-virgin olive oil
- Kosher salt and freshly ground pepper
- 2 white corn tortillas, torn into large pieces
- 4 carrots, chopped
- 1 red onion, chopped
- 1 red Fresno or jalapeno chile pepper, chopped (remove seeds for less heat)
- 2 cloves garlic, finely chopped
- 1 teaspoon ground cumin
- 6 cups low-sodium chicken or vegetable broth
- Pomegranate seeds
- Sliced scallions
- Sour cream mixed with lime zest and juice

- 1/2 cup green split peas
- 1/2 cup yellow split peas
- 1 large carrot, diced
- 1 large parsnip, diced
- 1 stalk celery, diced
- 1 medium onion, diced
- 2 shallots, minced
- 4 ounces 98% fat-free ham steak, diced
- 1 teaspoon minced fresh sage
- 1/4 teaspoon dill weed
- 1/4 teaspoon celery seed
- 1/4 teaspoon ground cayenne
- 1 teaspoon hickory liquid smoke
- 1/2 teaspoon celery flakes
- 1/2 teaspoon dried chervil
- 5 cups water
Sauerkraut Kielbasa Soup from Chez Raché

In large pot or dutch oven over medium heat, saute onion until translucent, stirring occasionally
- 1 tbsp olive oil
- 1 cup chopped onion
- 2 cloves minced garlic
- 1/2 tsp paprika
- 2 carrots, thinly sliced
- 3 cups cubed potatoes (yukon gold or red)
- 1 package Tofurkey Kielbasa – sliced lengthwise, then into 1/2-inch pieces
- 16 oz sauerkraut, drained (I like Hengstenberg, it’s made with white wine)
- 10 cups water
- 3 tbsp + 1 tsp Better Than Bouillon No-Chicken broth concentrate
- 1/4 tsp ground marjoram
- 1 tsp parsley flakes
- 1/4 tsp fresh-ground black pepper, or more to taste
