In a small bowl, combine the sugar, fish sauce, water, rice vinegar, garlic, ginger, pepper and chiles
- 1/3 cup dark brown sugar
- 1/4 cup fish sauce
- 1/4 cup water
- 3 Tablespoons rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon finely grated fresh ginger
- 1 teaspoon black pepper
- 2 dried red chilies, halved
- 1 Tablespoon canola oil
- 1 shallot, minced
- 1 pound skinless, boneless chicken thighs, cut into 1-inch cubes
- Cilantro for garnish
Pecan Pumpkin Pie Bars

- Crust:
- 1 cup flour
- 1/2 cup quick oats
- 1/2 cup brown sugar, firmly packed
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- Filling:
- 1 (15-oz.) can solid-pack pumpkin
- 1 (11-oz.) can evaporated milk
- 2 eggs
- 3/4 cup sugar
- 1 tsp vanilla
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- Topping:
- 1/2 cup chopped pecans
- 1/2 cup brown sugar, firmly packed
- pinch of salt
- 2 Tbsp. butter, softened

This picadillo recipe is very easy to make and is a perfect comfort food
- 1 lb ground beef
- 2 tbs olive oil
- 1 medium large yellow onion, diced
- 6 garlic cloves, finely chopped
- 1/2 bell pepper, diced
- 1 tbs cumin
- 3 small potatoes, peeled and cut in small pieces
- 3/4 cup dry white wine
- 1/2 cup whole green olives, stuffed w/ pimentos
- 1/2 cup raisins
- 1/4 cup capers, drained
- 2 cans of tomato sauce (8 oz cans)
- Salt and pepper to taste
Bang Bang Shrimp Pasta

This slightly spicy shrimp pasta is easy to make and delicious for a weeknight dinner
- SAUCE:
- 8 ounces spaghetti
- 8 ounces medium shrimp, peeled and deveined
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika, or more, to taste
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
- 1/2 cup mayonnaise
- 1/4 cup Thai sweet chili sauce
- 2 cloves garlic, pressed
- Juice of 1/2 lime, or more to taste
- 1 teaspoon Sriracha, optional
- Pinch of crushed red pepper flakes
Emeril's Braised Chicken Thighs

When I'm preparing this dish, it's all I can do to wait until it's finished simmering to get a taste of the awesome...
- 6 chicken thighs (about 2 pounds), trimmed of any excess skin or fat
- 1 tablespoon Emeril's Original Essence or Emeril's Essence Creole Seasoning
- 1 teaspoon salt
- 1/2 cup plus 1 tablespoon all-purpose flour
- 2 teaspoons olive oil
- 3 tablespoons unsalted butter
- 2 cups thinly sliced yellow onions
- 1 tablespoon minced garlic
- 6 sprigs fresh thyme, tied in a bundle, or 2 sprigs fresh rosemary
- 1/4 teaspoon freshly ground black pepper
- 3 cups chicken stock or canned, low-sodium chicken broth
- 1/4 cup chopped fresh parsley
- Steamed white rice, for serving
Winter Cranberry Beef Stew

This turned out to be an absolutely mind-blowing combination, all the flavors came together in a beautiful way
- 2 pounds fat-streaked stew beef 5 oz bacon
- 2 cups cranberries
- 2 large onions
- 1 tbsp tomato paste
- 2 tbsp molasses
- 1 cup red wine
- 2 cups beef bouillon
- 2 tbsp all-purpose flour 1/2 tsp paprika powder 1 tsp dried thyme
- 3 bay leaves 2 tbsp butter 1/4 tsp pepper 1 tsp salt
- Optional: garlic
Red Onion Salad Dressing

Combine all ingredients in a food processor and process until desired texture is achieved
- 1 medium red onion, rough chop
- 1 glove garlic, minced
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 / 2 teaspoon fresh ground pepper
- 1 teaspoon celery seed
- 3 teaspoons dijon mustard
- 1 / 3 cup vinegar
- 3/4 cup oil (vegetable or olive oil)
Corn and Potato Chowder

- 1 (14.75-ounce) can cream-style corn
- 1 (14.5-ounce) can diced tomatoes
- 1 (14-ounce) can chicken broth
- 1/2 cup chopped onion
- 1/2 cup coarsely chopped celery
- 3/4 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1 cup whipping cream
- 1/4 cup butter or margarine

- 2 tbs. Dijon mustard
