Heat the olive oil in a large skillet over medium high heat
- 1 tbs. olive oil
- 1 small yellow onion, diced
- 1 clove garlic, minced
- 1 lb. lean ground beef
- 2 tsp. tomato paste
- 1 tsp. salt (to taste)
- 2 tsp. cumin
- 1/2 cup pimento stuffed green olives
Lemon Broccolini

Process bread in a food processor 30 seconds to 1 minute or until coarsely crumbled
- 1 cup (1/2-inch) French bread baguette cubes
- 2 tablespoons butter
- 1 garlic clove, pressed
- 2 tablespoons chopped fresh flat-leaf parsley
- 2 teaspoons lemon zest
- 1 1/2 pounds fresh Broccolini
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
Bacon and Cheddar Grits Quiche

1. Preheat oven to 350°. Cook bacon in a skillet over medium heat until crisp
- 6 thick bacon slices
- 2 1/4 cups milk
- 2 tablespoons butter
- 1/2 cup uncooked stone-ground grits
- 2 teaspoons kosher salt, divided
- 1 teaspoon black pepper, divided
- 2 1/2 cups shredded sharp Cheddar cheese, divided
- 6 large eggs
- 2 1/2 cups half-and-half
- 1 cup heavy cream
- 1/3 cup sliced green onions

Brown steak on grill Mix together remaining ingredients except for catsup and cornstarch
- chuck steak
- 1 or 2 green pepper, coarsely chopped
- 1 or 2 large onions, coarsely chopped
- 1 can fire roasted tomatoes
- 1/2 can mild chiles and tomatoes
- 2 or 3 cloves of garlic, chopped
- 1 tbs. mustard
- 2 tbs. Worcestershire sauce
- 1 tbs. brown sugar (You can use white sugar if you don't have brown sugar.)
- 1 tsp. vinegar if desired
- catsup, about 1/2 cup more or less
- 1 tbs. corn starch
Slow Cooker Kielbasa Soup with Kale and White Beans

Slow-cooked soup made with hearty chunks of Polish kielbasa, kale, and creamy cannellini beans
- 1 large onion, diced
- 2 cloves garlic, minced
- 3 Polish kielbasa links, sliced
- 2 (15.5-ounce) cans cannellini beans, drained and rinsed
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon Italian seasoning
- 5 cups chopped kale
- 6 cups chicken stock
- salt and pepper to taste
Aromatic Chicken Rice Soup

This Thai-influenced soup is wonderful when you're feeling under-the-weather
- 2 quarts Chicken Stock
- 2 carrots, diced
- 2 stalks celery, diced
- 2 ″ knob fresh ginger, minced
- 1/2 ″ knob galangal root, minced
- 2 tablespoons lime juice
- 1 onion, minced
- 4 cloves garlic, minced
- 1/8 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 cup minced cilantro
- 1 1/2 cups cooked rice
- 2 cups diced cooked chicken
Potato Corn and Chicken Stew (Ajiaco)

This stew gets most of its creamy texture from the potatoes
- 1 tablespoon olive oil, divided
- 12 chicken thighs, skinned, about 4-pounds
- 3 1/2 cups fat-free, lower sodium chicken broth, divided
- 1 1/2 cups fresh corn kernels, divided, about 3 ears
- 1/2 cup chopped onion
- 1/2 cup thinly sliced carrot
- 1 1/2 cups water
- 1 1/2 teaspoon chopped oregano
- 1 teaspoon chopped fresh thyme
- 2 1/2 cups, cubed peeled Yukon gold or red potatoes
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1/4 tablespoon salt
- 1/2 teaspoon hot pepper sauce
- 1/4 teaspoon freshly ground black pepper
- 3/4 cup cubed peeled avocado
- 4 1/2 teaspoon capers

- 2 1/2 lbs. flank steak, cut in 3”x 4”pieces
- GOYA® Adobo with Pepper, to taste
- 2 large yellow onions, finely chopped (about 2 1/2 cups)
- 1 1/2 green bell peppers, finely chopped (about 1 1/2 cups)
- 1 jar (6 oz.) GOYA® Sofrito
- 3 tsp. GOYA® Minced Garlic or 6 cloves garlic, finely chopped
- 1 can (8 oz.) GOYA® Tomato Sauce
- 1 packet Sazón GOYA® with Coriander and Annatto

- Green onions cut up.

Roasted Tomatillo Hummus

This makes a really awesome blend between a salsa and a hummus
- 1 can chickpeas/garbanzo beans, drained and rinsed
- 5 large tomatillos, husks removed, washed and cut into quarters
- 3 cloves garlic
- 1/4 cup chopped cilantro
- 1 to 2 jalapenos, minced (seeds and ribs removed if desired)
- juice 1 lime
