Thai Peanut Sauce

This easy no-cook peanut sauce has a terrific authentic Thai taste
- 1 1/2 cups creamy peanut butter
- 1/2 cup coconut milk
- 3 Tbsp. water
- 3 Tbsp. fresh lime juice
- 3 Tbsp. soy sauce
- 1 Tbsp. fish sauce
- 1 Tbsp. hot sauce
- 1 Tbsp. minced fresh ginger root
- 3 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
Banoffee Danger Pie

Your first step can be done way ahead of time (at least hours but can be as much as months before)
- 3 bananas
- 1 tin of sweetened condensed milk
- 2 cups whipping cream
- 1 package of digestive biscuits or graham crackers
- 1 stick of butter
- 1 tsp vanilla
- 1 small bar of chocolate
- (Tricia: I added lots of pecans and instead of chocolate bar, I chopped mint chocolate chips)
- If you don't mind using store bought ingredients you can cut down a lot on the steps but since I was posting it I figured I would make a proper version entirely from scratch just for you.
Tzatziki

Put the cucumber in a strainer set over a bowl
- 1 medium cucumber peeled, halved, seeded, and finely chopped
- 1/8 tsp. salt
- 1 cup plain Greek yogurt
- 1 Tbsp. olive oil
- 1 tsp. fresh lemon juice
- 1 tsp. minced fresh dill
- 1 tsp. fresh mint, chopped
- 1 tsp. fresh parsley, chopped
- 1 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. black pepper
Barbequed Pork Perfect

- PORK:
- 2 1/2 lbs. pork tenderloin, cut into large cubes
- olive oil, for brushing
- 1 Tbsp. lemon juice
- 4 Tbsp. butter
- MARINADE:
- 1/4 cup soya sauce
- 1/2 cup water
- 1/4 cup honey
- 2 Tbsp. red wine vinegar
- 1 tsp. garlic
- 1 tsp. ginger
- 1 tsp. paprika
- salt to tast
Thai Inspired Confetti Salad

- SALAD:
- 1 Roma tomato, chopped
- 1 1/2 cups fresh green beans, cut into 1/2 inch pieces
- 1 cucumber, cut into 1/2 inch cubes
- 1 1/2 cups cubed papaya
- 2 cloves cloves garlic, minced
- 1 fresh Thai or Serrano chile, finely minced
- DRESSING:
- 1 lemon, juiced
- 2 limes, juiced
- 2 Tbsp. fish sauce
- 1 Tbsp. white sugar
- 1/2 cup roasted peanuts, chopped
- 1/4 cup cilantro leaves, chopped
Sweet and Sour Bok Choy

Heat oil in large skillet, add bok choy and onion
- 3 Tbsp. salad oil
- 1 head bok choy, washed, trimmed, & cut into 1" pieces
- 1/4 cup packed brown sugar
- 1/2 tsp. minced fresh ginger root
- 1 Tbsp. cornstarch
- 1 sliced sweet onion
- 1 Tbsp. soy sauce
- 1/4 cup red wine vinegar
Pumpkin Peanut Thai Soup

Preheat the oven to 350 degrees
- 1 small to medium pie or sugar pumpkin
- 1 Tbsp. olive oil
- 1 small onion
- 1 cup coconut milk
- 2 cups vegetable broth
- 1/4 cup creamy peanut butter
- 1 Tbsp. green Thai curry paste
- Freshly ground pepper
Gil's Oatmeal Pancakes

- 3/4 cup large flake rolled oats
- 1 cup milk - any kind
- 1/2 cup flour, white or whole wheat
- 1 Tbsp. brown sugar
- 1 Tbsp. baking powder, use a little more if using whole wheat flour

- 2 eggs
- 2 Tbsp. vegetable oil
Boeuf En Croute With Duxelles

- Chasseur Sauce:
- 1 - 2 kg (4 pound) beef tenderloin
- 2 Tbsp. butter or margarine
- 2 - 227 g (8 ounce) packages fresh mushrooms, finely chopped
- 1/4 cup finely chopped onion
- 2 Tbsp. Brandy or Port wine
- 1 Tbsp. chopped, fresh parsley
- Dash each, salt, pepper
- 2 cups baby spinach
- 2 - 284 g (10 ounce) packages Frozen Patty Shells, thawed
- 1 egg, beaten
- 1 - 113 g (4 ounce) package fresh shiitake mushrooms
- 3 Tbsp. butter or margarine
- 3 Tbsp. chopped shallots
- 1 tsp. garlic, minced
- 1/4 tsp. dried tarragon leaves, crushed
- 1/4 cup Chablis or other dry white wine
- 1 cup beef stock
