- 3 cups fresh broccoli florets
- 1/2 cup chopped red bell pepper

Indian Curry Soup

- 1 medium eggplant
- 3 cups red potatoes
- 1 14-ounce can diced tomatoes
- 1 15-ounce can chick peas, rinsed and drained
- 1 Tbsp. grated ginger
