- 3 1/2 lbs. firm sweet apples*, peeled, cored and sliced 1/4-inch thick
- 1/2 cup plus 1 Tbsp. sugar
- 1/4 cup packed light brown sugar
- 1/2 tsp. grated fresh lemon zest
- 1/4 tsp. salt
- 1/8 tsp. ground cinnamon
- 2 tsp. fresh lemon juice
- 2 cups fresh or frozen cranberries
- 1/4 cup orange juice
- 1/2 cup sugar
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 cup water
- 1 lightly beaten egg
- Sweet Apples: Golden Delicious, Jonagold, Braeburn
Blueberry Pie

Preheat oven to 425 degrees and adjust oven rack to lowest position

- 6 cups (30 ounces) fresh blueberries
- 3/4 - 1 cup plus 1 Tbsp. sugar
- 1/4 cup cornstarch
- 1/4 tsp. salt
- 1 tsp. grated fresh lemon zest
- 2 tsp. fresh lemon juice
- 1 lightly beaten egg
Nicki's Clam Chowder

I usually serve this on New Year's Day and invite my friends and family to drop by
- 6 slices bacon, chopped
- 3 Tbsp butter
- 1 tsp. garlic
- 2 cans of clams
- 4 medium potatoes, peeled and diced
- 1 medium onion, diced
- 1 stick celery, chopped
- S&P
- 2 Tbsp. dried parsley
- 1 pint light cream
- 3/4 litre whole milk
- 1/4 cup butter
Florentine Lasagna

1. Preheat oven to 375 degrees F
- 12 oz. bulk Italian sausage or turkey Italian sausage
- 1/2 cup chopped onion
- 1 14-1/2-oz. can diced tomatoes, drained
- 1 8-oz. can tomato sauce
- 2 tsp. dried Italian seasoning, crushed
- 6 dried lasagna noodles
- 1 egg, lightly beaten
- 1 15-oz. carton ricotta cheese or 2 cups cottage cheese, drained
- 1/3 cup grated Parmesan cheese
- 1 10-oz. pkg. frozen chopped spinach, thawed and well drained
- 8 oz. sliced mozzarella cheese
Boeuf Bourguignonne

This is my mum's recipe and I've never tasted any better
- 3 lbs. lean beef, cubed (top sirloin)
- 1/2 lb. bacon, chopped
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. thyme
- 1 tsp. oregano
- 1/2 tsp. garlic
- 1 can consomme
- 1/2 soup can good burgundy wine
- 1 cup whole small mushrooms
- 1 cup whole pearl onions
Spicy BBQ Shrimp

In a large bowl, mix together all of the ingredients except the shrimp
- 2 pounds large shrimp, uncooked, pull the skin/tails off
- 1 cup olive oil
- 1 lemon, juiced
- 2 Tbsp. Louisiana hot sauce
- 3 cloves garlic, minced
- 1 Tbsp. tomato paste (I just use ketchup)
- 2 tsp. dried oregano
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1/4 cup chopped fresh cilantro
- "dash" of Dave's Insanity super-hot sauce
- Note: Add more Dave's and/or Chili Powder if you like very spicy.
Spicy Thai Marinade with Basil and Cilantro

In a mini food processor, pulse the basil, cilantro, garlic, sambal oelek and fish sauce until finely chopped
- 1/4 cup basil leaves
- 1/4 cup cilantro leaves
- 8 peeled garlic cloves
- 2 Tbsp. sambal oelek or other Asian chile sauce
- 2 Tbsp. Asian fish sauce
- 1 tsp. finely grated lemon zest
- 1 tsp. finely grated lime zest
- 1/2 cup vegetable oil
