The secret to a good empanada is to roll the dough thin, and have a good ratio of filling to pastry

  • DOUGH:
  • 3 cups plus 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1/3 cup vegetable shortening
  • 3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into small cubes
  • 1/2 cup ice water, plus more if needed
  • FILLING:
  • 2 Tbsp. olive oil
  • 1 cup onion, finely chopped
  • 2 Tbsp. garlic, finely chopped
  • 4 Tbsp. jalapeno pepper, seeded and finely chopped
  • 1/4 tsp. ground cinnamon
  • 2 tsp. ground cumin
  • 1/4 cup tomato paste
  • 1/2 tsp. salt
  • 13 ounces (385 gm) lean ground beef
  • 1/4 cup water
  • 1/3 cup pine nuts, toasted
  • 1/3 cup mozzarella, grated
  • 1 Tbsp. milk
  • 1 egg
