Beef and Pine Nut Empanadas

The secret to a good empanada is to roll the dough thin, and have a good ratio of filling to pastry
- DOUGH:
- 3 cups plus 2 Tbsp. flour
- 1/2 tsp. salt
- 1/3 cup vegetable shortening
- 3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into small cubes
- 1/2 cup ice water, plus more if needed
- FILLING:
- 2 Tbsp. olive oil
- 1 cup onion, finely chopped
- 2 Tbsp. garlic, finely chopped
- 4 Tbsp. jalapeno pepper, seeded and finely chopped
- 1/4 tsp. ground cinnamon
- 2 tsp. ground cumin
- 1/4 cup tomato paste
- 1/2 tsp. salt
- 13 ounces (385 gm) lean ground beef
- 1/4 cup water
- 1/3 cup pine nuts, toasted
- 1/3 cup mozzarella, grated
- 1 Tbsp. milk
- 1 egg
Stuffed Cornish Hens

Great to serve when you want to impress your guests
- 4 small or 2 medium Cornish hens
- 1 cup rice, cooked
- 1 1/2 cup chopped onion
- 1/2 cup mushrooms
- 6 Tbsp. butter
- S&P
- 1/2 tsp. marjoram
- 1/2 tsp. thyme
- 1 cup slivered almonds
- 12 strips bacon
Lamb Kofta

- 1 small onion
- 1 lb. ground lamb
- 2 Tbsp. curry paste
- 2 Tbsp. plain yogurt

Blackened Shrimp Fettucini

Combine peeled shrimp, oil and Cajun seasoning in a medium bowl
- 1 lb. fresh shrimp, peeled and deveined
- 1 Tbsp. olive oil
- 1 Tbsp. Cajun seasoning
- 6 ounces fettucini
- 1 Tbsp. butter
- 3 cups fresh mushrooms, sliced
- 1 Tbsp. shallots, chopped
- 2/3 cup chicken broth
- 1/2 cup sour cream
- 1 Tbsp. cornstarch
- 1 cup chicken broth
- 1 jar roasted red bell peppers
- 1 Tbsp. drained capers
Meatballs in Mushroom Sauce

This was my children's favorite meal
- 1 1/2 lbs. lean ground beef
- 1/2 - 1 cup oatmeal
- 2 eggs, beaten
- 2 Tbsp. Worcestershire sauce
- 1 tsp. powdered garlic
- 1 tsp. salt
- 1 can cream of mushroom soup
- 1 soup can of water
- 1/2 cup sliced mushrooms (optional)
Bread Pudding

Absolutely delicious. Serve cold as a square, for breakfast, lunch, snack and dinner
- 3/4 lb. bread (10 to 15 slices)
- 1 cup raisins
- 3/4 cup sugar
- nutmeg to taste
- 1 or 2 eggs
- 1/2 margarine, melted
Shrimp Pasta Salad

- 1/2 lb. shrimp, peeled and deveined
- 1 cup sea-shell pasta
- 1 yellow pepper, diced
- 1 cup pineapple tidbits, drained
- 1 cup red seedless grapes, halved
- 1 /c cup scallions, chopped
- 1/2 cup celery, chopped
- 1 cup mayonnaise
- 4 parsley garnishes
- 2 slices of lemon, halved
- lettuce or endive to serve
Stir-Fried Chicken with Thai Basil

Excellent, easy and very quick
- 1 1/2 lbs. boneless, skinless chicken breasts
- 2 Tbsp. vegetable oil
- 4 garlic cloves
- 4 scallions, finely chopped
- 6 green chillies, seeded and sliced thinly
- 1 green bell pepper, seeded and sliced thinly
- 1/2 cup Thai basil leaves, coarsely chopped
- 2 Tbsp. fish sauce
Scallop Casserole

- 1 cup rice, cooked
- 3/4 to 1 lb. scallops, uncooked
- S&P
- 1 large onion, chopped
- 1 green pepper, diced
- 1 cup mushrooms, sliced
- 1/2 cup breadcrumbs
- 2 Tbsp. butter
- 4 Tbsp. butter
- 3 Tbsp. flour
- 1 1/4 cup milk
- 1/4 tsp. salt
- 1/8 tsp. ground cloves
- Pinch of pepper and nutmeg
- 1/2 cup Havarti cheese, grated
English Mint Sauce
