Quick Green Chicken Curry

Really easy and very good
- 1 Tbsp. vegetable oil
- 6 scallions, sliced
- 1 1/2 lbs. boneless, skinless chicken breasts
- 1 cup coconut cream
- 1/2 cup chicken broth
- 3 Tbsp. Thai green curry paste
- 3 Tbsp. chopped cilantro
- Cooked noodles or rice, to serve
Green Monster Smoothies

Dump all ingredients into a blender and puree until smooth and at desired drinking texture
- Handful of fresh baby spinach
- Handful of frozen diced pineapple
- Handful of frozen sliced peaches or diced mango
- 1 banana, peeled and cut up
- 1 cup orange juice (or more as needed)
MONGOLIAN BEEF

Prepare the meat: First, make sure the steak slices are dry (pat them dry) and mix them with the corn starch
- 1 lb of flank steak, thinly sliced crosswise
- 1/4 cup of cornstarch
- 3 teaspoons of canola oil
- 1/2 teaspoon of grated ginger (about 1/2 inch piece)
- 1 tablespoon of chopped garlic (about 2 -3 large cloves)
- 1/2 cup of water
- 1/2 cup of soy sauce (I use low sodium)
- 1/2 cup brown sugar
- 1/2 teaspoon of red pepper flakes
- 3 large green onions, sliced crosswise into thirds

- 1 lb. dried beans, soaked overnight
- 1/2 tsp. dried mustard
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. Worcestershire sauce
- Freshly ground pepper
- 2 cups ham, cubed
- 1 medium onion, chopped
- 2 Tbsp. brown sugar
- 2 Tbsp. molasses
- 2 Tbsp. maple syrup
Tilapia in Lemon Dill Cream Sauce

Easy way to get more fish into your diet and tastes great
- 6 tilapia filets
- 1 large onion, chopped
- 1 large stalk celery, chopped
- 1 large leek, white part only, sliced and well cleaned
- Olive oil
- 1/2 cup heavy cream ( I use half and half - it’s rich enough)
- Scant 1/4 cup lemon juice
- 1/4 cup fresh dill OR 1 Tbsp dried dill
- 2 slices bread processed into crumbs
- 4 Tbsp melted margarine
- 4 Tbsp grated Parmesan cheese

- 1 cup butter
- 2 cups sugar
- 1 large and 1 small can of evaporated milk
Canyon Ranch Scallops

In a small bowl, combine 3 tablespoons and lemon zest
- 1/4 olive oil
- 1/4 cup grated lemon zest (4 lemons)
- 1 tsp. honey
- 1/2 tsp. fresh lime juice
- 1/2 papaya, peeled and diced, or 2 mangos
- 1 1/2 Tbsp. red pepper, minced
- 1 tsp. minced ginger
- 2 tsp. chopped cilantro
- 1 tsp. chopped green onion
- 1 tsp. minced red onion

- 1 lb. sea scallops, about 12
Grilled Vegetable Paella

Vegetarian dish that takes full advantage of the bounty of the harvest
- 2 Tbsp. olive oil
- 1 clove garlic, finely chopped
- 1 small yellow zucchini, sliced diagonally into 1/4 inch slices
- 1 small green zucchini, sliced diagonally into 1/4 inch slices
- 2 Japanese eggplants, sliced diagonally into 1/4 inch slices
- 2 red bell peppers, seeded, and quartered
- 1 red onion, cut into wedges
- 1 8-ounce jar marinated artichoke hearts, drained and patted dry
- 2 Tbsp. olive oil
- 3 cloves garlic, finely chopped
- 1/2 tsp. curry powder
- 1 Tbsp. fresh rosemary
