Hearty Squash Casserole

What To Do: Preheat oven to 350 degrees F
- 2 eggs
- 1 tablespoon sugar
- 1 1/2 cup shredded sharp Cheddar cheese, divided
- 1/2 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound yellow summer squash, cut into 1/4-inch slices
- 1/4 cup plain bread crumbs

- 1/4 cup package Organic Miracle Noodle Rice
- Simply Beyond Garlic Spray-On Herbs
- 1/3 cup Carbquik baking flour

Ginger Pumpkin Bars with Cream Cheese Icing

- CREAM CHEESE ICING:
- 2 tablespoons butter (for greasing)
- 4 eggs
- 1 1/2 cups light brown sugar
- 1 cup vegetable oil
- 1 can pumpkin puree (15 ounces)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon freshly ground black pepper
- 3/4 cup crystallized ginger (finely chopped, tossed in 1 tablespoon flour)
- 2 packages cream cheese (softened, 8 ounces each)
- 1 stick butter (softened)
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Skillet Potatoes

Fill a medium saucepan three-quarters full with water and bring to a boil over high heat
- 6 potatoes, washed and thinly sliced
- 1/2 cup vegetable oil
- 1 large onion, thinly sliced
- 1 teaspoon salt
- 1 teaspoon black pepper
Sausage CheeseBalls

Mix all ingredients. Form into 1 inch balls
- 2 lbs, Jimmy Dean Sausage
- 1 1/2 cup biscuit mix
- 16 oz. shredded Sharp Cheddar
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/2 tsp garlic powder

- 5 cups cauliflower florets (about 1 pound)
- 1 cup shredded sharp Cheddar cheese
- 1 large egg, lightly beaten
