Apple Crisp Cookie Cups

Preheat oven to 350 degrees F
- 1 1/4 c. brown sugar (divided)
- 3/4 c. granulated sugar (divided)
- 2 sticks unsalted butter, softened (plus more for cooking apples)
- 2 eggs
- 1 tsp. vanilla
- 1 1/4 c. all-purpose flour
- 1 3/4 c. rolled oats
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. kosher salt
- 6 Granny Smith apples, peeled, cored and finely chopped
- 2 tsp. cornstarch
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cinnamon

- 1 tbsp. sliced black olives, chopped
- 6 tbsp. chunky salsa or pico de gallo
- 2 tbsp. fat-free sour cream
Pumpkin Chocolate Chip Cookies

Preheat oven to 400°F. Mix the Pumpkin Puree, Brown Sugar, Eggs, and Oil until smooth
- 1 3/4 cups Pureed Pumpkin (cooked)
- 1 cup Brown Sugar
- 2 Eggs
- 1/2 cup Vegetable Oil
- 1 1/4 cups Flour
- 1 1/2 cups Whole Wheat Flour
- 1 tablespoon Baking Powder
- 2 teaspoons Cinnamon
- 1 teaspoon Nutmeg
- 1/2 teaspoon Salt
- 1/4 teaspoon Ground Ginger
- 1 cup Dark Chocolate Chips

SOUTHWESTERN ROLLED OMELET

Preheat oven to 375°F. Spray a quarter sheet tray with cooking spray then line it with parchment paper
- 6 large eggs

- 1/4 cup flour

Pecan Pie Muffins

Really pretty and very tasty shrimp dip
- Dissolve:
- heat: 1 can cream of mushroom soup
- Stir in 8 oz. cream cheese
- 1 PCK. knox gelatin in 3 oz. water
- Add to soup mixture.Stir In:

- 1 cup mayonnaise
- 1 cup chopped celery
- 3 green onions, chopped
- 2 cans small shrimp, drained and rinsed.
Slow Cooker Baked Beans and Sweet Potato Stew

For the Bean Stew: in a large sauté pan, add olive oil and heat over medium-high heat
- 1 tablespoon olive oil
- 1/2 white onion (diced)
- 1 green bell pepper (seeded and diced)
- 1 tablespoon tomato paste
- 2 tablespoons Dijon mustard
- 1-2 tablespoons molasses
- 1 tablespoon cider vinegar
- 2 teaspoons Worcestershire sauce
- 1 tablespoon chipotle in adobo sauce
- 2 cups navy beans (drained and rinsed, canned, 14.5 ounces each)
- 2 sweet potatoes (peeled and cut in 1/2-inch pieces)
- 3 cups chicken broth
- 2 jalapenos (seeded and minced)
- 1/4 cup parsley stems (finely chopped)
- 2 cloves garlic (minced)
- 1 lemon (zested)
- 2 tablespoons olive oil
