Creamy Roasted Red Pepper and Cauliflower Soup

Preheat the broiler to high
- 4 large sweet red bell peppers, cored, stemmed, seeded, and pressed flat
- 4 tablespoons olive oil, divided
- 1 small onion, chopped (about 3/4 cup)
- 2 medium garlic cloves, chopped (about 2 teaspoons)
- 1 teaspoon Kosher salt, plus more to taste
- 1/2 teaspoon ground black pepper, plus more to taste
- 1/2 teaspoon hot red pepper flakes
- 1 teaspoons finely chopped fresh thyme leaves
- 1/2 teaspoon smoked paprika (optional)
- 1 quart homemade or store-bought low-sodium chicken stock (see note above)
- 1 medium russet potato, peeled and chopped (about 1 cup)
- 1 head of cauliflower, core removed, cut into florets
- 1 teaspoon freshly squeezed juice from 1 lemon
- 1/3 cup pancetta, finely chopped (see note above)
- 1/2 medium apple, peeled, cored, and cut into 1/2 inch dice (about 1/2 cup)
- 2 slices of crusty Italian bread cut into 1/2 inch dice (about 1 cup)

- 24 oz pizza dough (store bought or see dough recipe link below)
- cornmeal
- olive oil
- 1 pound asparagus, trimmed, cut into 2-inch pieces
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- pinch of cayenne
- pinch of nutmeg
- 1/2 tsp salt
- 2/3 cup grated Parmesan
- 4 oz white cheddar cheese
Cheese & Mushroom Quiche

This cheesy mushroom quiche is amazing! Our family enjoys it often for breakfast or weekend brunch
- 10-inch CRUST:
- 6 tablespoons butter, cut into chunks
- 1 1/2 cups all-purpose flour
- 1/4 cup milk or more to make the right dough consistency
- FILLING:
- 1 large onion, chopped
- Approximately 2 handfuls mushrooms
- 2 garlic cloves, chopped
- 1/2 teaspoon salt
- Black pepper, to taste
- 4 large eggs
- 1 1/2 cups milk
- 2 tablespoons flour
- 1 1/2 cups packed cheddar, grated (but you can use Swiss, too, if you want a sharper taste)
- Paprika, to taste
- Butter, to saute veggies
Lemon Raspberry Mousse- by Mowglie

Mix gelatin and hot water, stir until dissolved add ice until melted
- Vanilla wafers
- 1 pkg lemon gelatin
- 3/4 c boiling water
- 1 c ice cubes
- 1 pkg cream cheese softened
- 1/4 c sugar
- 2 tsp lemon zest
- 1 (8oz) tub cool whip
- 1/3 c raspberry preserves
- 1 1/2 c sliced fresh fruit, strawberry, blueberry, raspberry, kiwi etc.
- If you want to turn dessert out on serving plate line 8" square pan with saran wrap, layer wafers sides and bottom.
Chocolate Macadamia Cheesecake Bars

Preheat the oven to 300 degrees F
- Crust:
- 1 3/4 cup vanilla wafer crumbs
- 3/4 cup finely chopped, roasted, salted macadamia nuts
- 1/2 cup firmly packed brown sugar
- 8 tablespoons (1 stick) butter, melted
- Filling:
- 2 (8-ounce) packages cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 3/4 cup sour cream
- 1/2 cup semisweet chocolate morsels
- 3/4 cups finely chopped, roasted, salted macadamia nuts
Peanut Butter & Chocolate Lover's trifle

Layer the bottom with broken up brownies
- Either a box of brownie mix, or a homemade batch of brownies. I used this Hershey's recipe. Last time I used chocolate cake, I think the crunchy & gooey texture of a brownie will add a nice twist though!
- 1/4 1/4 (either homemade, or canned). For an easy homemade recipe I just use a cup of heavy whipping cream, 1/4 cup of sugar and 1/4 tsp of vanilla.
- Reese's peanut butter cups, chopped
- Kit Kat bars, chopped (last time I used Reese's Pieces)
- 2 2 to packages of instant vanilla pudding made according to their directions.
