Cool off this summer with Frozen Pink Lemonade, in a PIE!

  • Ingredients:
  • 2 Pre-made Graham Cracker Crust
  • 1 quart (4 cups) vanilla ice cream
  • 6 oz or 1/2 can of a 12 ounce frozen pink lemonade concentrate
  • 1 container (4 oz) frozen whipped topping, thawed (I used light cool whip)
  • Red food coloring, if desired
  • Lemon or lime peel, if desired

Great summertime dessert! And this cool and refreshing icebox pie couldn't be easier to make

  • 1 (8 oz) block cream cheese, softened slightly
  • 1 (14 oz) can sweetened condensed milk, chilled
  • 3/4 cup frozen lemonade concentrate, thawed then measured
  • 2 drops yellow food coloring (optional)
  • 1 (8 oz) tub Cool Whip, thawed
  • 1 or 2 (9-inch) shortbread or graham cracker crust *see Note below*
  • Note: This made a really full pie, so next time I will use 2 crusts then top off with some additional Cool Whip or whipped cream. Or use the larger '2-extra servings' graham cracker crust.

For the crust, combine butter, crushed graham crackers, and ¼ cup sugar in a large bowl

  • 12 Tablespoons butter
  • 24 whole graham crackers, crushed into tiny crumbs (or substitute 4 cups gluten free graham cracker crumbs)
  • 1/4 cup sugar
  • Water, as needed
  • 3 egg whites (I recommend Davidson's Safest Choice)
  • Juice of 2 lemons (see note)
  • 3/4 cup sugar

  • 1-2.4 oz box instant lemon pudding mix
  • 2-8 oz packages cream cheese
  • 3/4 cup frozen lemonade concentrate
  • For the pie crust:
  • 2-2/3 cup graham crumbs
  • 1/3 cup sugar
  • 2/3 cup butter, melted
  • or you can use 1 graham cracker crust, 9 inch.
