- 4 (6-8oz) chicken breasts, boneless skinless, tenderloins removed and trimmed
- 1 cup flour
- Salt and pepper
- 1/4 cup vegetable oil
- 2 1/2 oz pancetta, cut into pieces 1 inch long and 1/8 inch wide

Received this recipe from a friend and realize that we don't "hunt" chickens, but I guess this meat is an easy subs...
- 2 Tbls extra virgin olive oil
- 1 1/2 pounds chicken thighs (I use boneless/skinless)
