  • 3 cups reserved juice from Steamed clams (see Robert Irvine Steamed clam recipe foodnetwork.com)
  • 2 1/2 dozen steamed clams roughly chopped (set aside)
  • 4 Thick slices of bacon cut into Lardon (or 6 regular)
  • 1 large onion diced
  • 2 T Olive Oil
  • salt/pepper
  • 1 1/2 lbs Yukon gold Potatoes cut into 1/2 dice
  • 4 T flour
  • 1 c Heavy Cream
  • 2 c milk (2 %)
  • 1/4 t thyme
  • 2 bay leaves
