Classic French Chicken in White Wine Sauce

Melt the butter in a large skillet over medium heat
- 2 Tbs. butter
- 4-lb. chicken, cut into 6 pieces (or 3-1/2 to 4 lb. chicken pieces)
- Salt and freshly ground black pepper
- 1 medium onion, finely chopped
- 1 medium carrot, finely chopped
- 1/2 rib celery, finely chopped
- 2 oz. prosciutto or country ham, finely chopped
- 3/4 cup dry white wine
- 3/4 cup homemade or low-salt canned chicken stock
- 3 Tbs. heavy cream (at room temperature)
- Chopped fresh flat-leaf parsley
Smashed Potato Salad

1. Combine potatoes and cold water to cover in large saucepan

- 3 pounds russet baking potatoes
- 3 hard-cooked eggs, shelled
- 1 cup reduced-fat mayonnaise
- 1/4 cup spicy brown mustard
- 4 teaspoons sugar
- 1 1/2 teaspoons salt

Chicken Noodle Casserole

- 2 cups uncooked egg noodles
- 2 cups cubed cooked chicken
- 1 package {16oz.} frozen peas, carrots, beans and corn
- 1 cup milk
- 1 can Cream of Chicken Soup

- 10.5 ounces condensed French onion soup
- 1 1/2 pounds ground beef
- 1/2 cup bread crumbs (dried)
- 1 large egg
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon flour
- 1/4 cup ketchup
- 1/4 cup water
- 1 tablespoon Worcestershire sauce
