Baked Sweet and Sour Chicken

1) Preheat oven to 325 degrees 2) Rinse chicken breasts in water & then cut into cubes
- Chicken Coating:
- 2-4 Boneless breasts of chicken
- salt & pepper
- 1 C cornstarch
- 2 eggs beaten
- 1/2 C canola oil
- Sweet & Sour Sauce:
- 4 TBSP ketchup
- 1/2 C distilled white vinegar
- 1 TBSP soy sauce
- 1 TSP garlic salt
Bang Bang Chicken Kabobs

Soak your bamboo wood skewers in water for about 15 minutes so that they don’t burn on the grill
- 3-4 boneless skinless chicken breasts cut into 1 inch chunks
- 1 red bell pepper cut into 1 inch chunks
- 1 medium yellow onion cut into 1 inch chunks
- Bamboo wood skewers
- Olive oil, salt, black pepper
- 1/4 cup mayo
- 1/4 cup Thai Sweet Chili Sauce
- 5-6 + drops of Sriracha Hot Sauce – Use this to taste- if you like things spicy, add more. If you don’t – add a few drops, then taste
- 1/4 teaspoon dried parsley

Preheat oven to 400 degrees
- 10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)
- 2 tablespoons butter
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 ounces chive and onion cream cheese
- 1 cup sour cream (or plain Greek yogurt)
- 1 cup whole milk, heavy cream or half-and-half (I used half-and-half)
- 1/2 cup shredded or grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch crushed red pepper flakes (optional)
- 1 - 1 1/2 cups chopped fresh spinach
- 2 cups cooked chicken (cubed or shredded)
- 1/2 cup fresh tomatoes, cut into large chunks (I used grape tomatoes sliced in half)
- Fresh basil or parsley, for garnish
