Apple Cider Sangria

Combine all ingredients together and stir, stir, stir
- 1 bottle (standard size) of pinot grigio
- 2 1/2 cups fresh apple cider
- 1 cup club soda
- 1/2 cup ginger brandy
- 3 honey crisp apples, chopped
- 3 pears, chopped
21 Day Fix Approved Chicken Enchiladas

Serves: 5, 2 enchiladas per serving
- 3 chicken breasts, cooked and shredded (for 21 day fix use 4 red containers worth)
- 15 oz can of black beans, drained and rinsed
- 4 oz can of green chilis, drained
- 8 oz can of diced tomatoes, drained
- 3/4 cup plain Greek yogurt (for 21 day fix use 1 red container worth)
- 2 tsp Southwest seasoning
- 10 corn tortillas
- Shredded cheese (for 21 day fix use 5 blue containers worth)
- 1 jar good quality enchilada sauce (check ingredients, I used Trader Joe’s)
- Cilantro, optional
Crock Pot Cube Steak

- Cube steak (I used a family size pack)
- 2 cans (10.75 ounce size) cream of mushroom soup
- 1 envelope onion soup mix
- 3/4 cup water
- Salt and Pepper to taste

- 5 teaspoons paprika
- 4 1/2 teaspoons ground cumin
- 2 1⁄2 teaspoons onion powder
- 2 1⁄2 teaspoons garlic powder
- 1 1⁄2 teaspoons dried oregano
- 1 ⁄8 teaspoon cayenne pepper
Creamy Chicken Bake

Preheat oven to 350 degrees F
- 2 1/2 to 3 lbs Boneless Skinless Chicken Breasts (I use 4 large breasts)
- 1 can Cream of Mushroom Soup (10 3/4 ounces, condensed)
- 1 can Cream of Chicken Soup (10 3/4 ounces, condensed)
- 1 Cup Sour Cream
- 8 oz can Mushrooms drained (stems and pieces) *optional
- 1/2 Cup Water
- 1/2 teaspoon Onion Powder
- 1 teaspoon Chives (chopped)
- Few dashes of Paprika
- Salt and Pepper to taste
Chocolate Coconut Cashew Butter

Soak cashews in water for at least an hour (4-6 hours or more is ideal)
- Optional and omit if you don’t like coconut flavored food; at which point you’d have Chocolate Cashew Butter:
- Makes about 2/3 to 3/4 cup
- 1/2 cup cashews, soaked (I used raw, unsalted, whole cashews from TJs. Use raw/unsalted if possible)
- 1/3 cup agave/honey/maple syrup (combo of one or any), to taste
- 1/3 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup coconut flakes (unsweetened or sweetened)
- 2 tablespoons coconut oil
KFC Style Gravy

Boil the water and add bouillon cubes; stir until dissolved
- 4 tbsp. butter or shortening
- 5 tbsp. flour
- 1/4 tsp. sage - OPTIONAL
- 1/4 tsp. garlic powder
- 1/4 tsp. black pepper
- 1 beef boullion cube
- 1 chicken boullion cube
- 2 cups water
Turkey Zoodle Soup

21 Day Fix: Per Serving 3/4 red, 1 green, ½ Yellow
- 1 Tbsp extra virgin olive oil
- 1 small yellow onion, diced
- 1 cup chopped celery
- optional: 1 clove garlic or shallot, minced
- 2 cups freshly made Zucchini Noodles
- 1 cup chopped carrots
- 6 cups free-range, prepared chicken broth, or vegetable broth
- 3 bay leaves
- 1 lb. precooked & diced Turkey breast {or use chicken breast}
- 1 tsp chopped fresh parsley
Pork Chops with Potatoes & Vinegar Peppers

Boil 4-6 cups of water. Wash and peel the potatoes, cut them into chunks and cook through
- 8 medium sized Yukon Gold potatoes cut into cubes
- 4-6 center cut 1" thick pork chops (on or off the bone)
- 1/4 C Canola Oil
- 1 12oz jar of sliced red, green, & yellow Vinegar Peppers (I prefer Centro brand)
- Milk
- Bread Crumbs
- Flour
- Salt & pepper to tast
Crock Pot Cashew Chicken with Cauliflower RIce

- Cauliflower Fried Rice Ingredients:
- 1/4 cup almond flour
- 1/2 tsp. black pepper
- 2 lbs. chicken breasts, cut into bite-size pieces
- 1 tbs. coconut oil
- 2 tbs. rice wine vinegar
- 2 tbs. tomato paste
- 1/2-1 tbs. honey or agave
- 2 minced garlic cloves
- 1/2 tsp. minced fresh ginger
- 1/4-1/2 red pepper flakes
- 1/2 cup raw cashews
- 1/2 cup chopped spinach
- 1/2 cup grated cauliflower florets
- (about quarter cauliflower head)
- 2 tablespoons red peppers, small
- dice
- 1 tablespoon and 1 teaspoon low
- Sodium soy sauce
- 1 teaspoon minced garlic
- 1/4 teaspoon ground white pepper
- 1/8 teaspoon kosher salt
- 1 large egg
- 1 teaspoon low sodium soy sauce
- 1 tablespoon olive oil
- Sliced green onion for garniture
