Carrot and Ginger Soup

A warm soothing soup for fall
- 1/4 tsp Cinnamon
- 1/4 tsp Allspice
- 1/4 tsp Nutmeg
- 1 Tblsp Maple Syrup
- 1/2 tsp Olive Oil
- 3 1/2 C Diced Carrots
- 1/2 C Chopped Onion
- 1 tsp Minced Garlic
- 1 1/2 tsp Minced Ginger
- 4 C Water
- 1 C Orange Juice
Chicken and Spinach Pasta Bake

Preheat oven to 400 degrees
- 10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)
- 2 tablespoons butter
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 ounces chive and onion cream cheese
- 1 cup sour cream (or plain Greek yogurt)
- 1 cup whole milk, heavy cream or half-and-half (I used half-and-half)
- 1/2 cup shredded or grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch crushed red pepper flakes (optional)
- 1 - 1 1/2 cups chopped fresh spinach
- 2 cups cooked chicken (cubed or shredded)
- 1/2 cup fresh tomatoes, cut into large chunks (I used grape tomatoes sliced in half)
- Fresh basil or parsley, for garnish
Sweet Soft Cherry Bread with Cherry-Almond Glaze

Cheery cherry bread! This tasty bread is perfect for brunch, dessert or just to snack on
- GLAZE:
- 1 (10 ounce) jar maraschino cherries, divided
- 2 tablespoons all purpose flour
- 1 3/4 cup all purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- pinch salt, optional and to taste
- 2 large eggs 1/2 cup canola or vegetable oil
- Cherry juice, reserve 1/4 cup from the jar of cherries
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1/4 cup reserved cherry juice, from the jar of cherries
- 1 teaspoon almond extract about 1 1/2 cups+ confectioners' sugar
Sweet Potato Egg Bake

21 Day Fix Container: 1 red, 1 green and 1 yellow
- steam diced sweet potatoes .
- Dice fav veggies. I used mushrooms, tomato, onion, bell pepper.
- 2 lightly beaten eggs
- Mix with garlic powder and cilantro.
Buffalo Cauliflower Bites and Touch Down Ranch Dip

These are a great veggie alternative to traditional wings! Preheat Oven to 450° Cut the cauliflower into bite size...
- Makes 3 servings
- 1 head of Cauliflower
- 3 Tbsp Extra Virgin Olive Oil
- 1 Tbsp nutritional yeast
- Pinch of Salt
- 2 Tbsp Buffalo Tabasco Sauce
- TouchDown Ranch dipping sauce
- 1/2 cup of Greek Yogurt
- 3 Tbsp Lemon Juice
- 1 Tbsp Extra Virgin Olive Oil
- 1 tsp Garlic Pepper
- Sea Salt to Taste
- Mix together and serve with your Buffalo Cauliflower Bites. Also great with raw veggies :) YUM!
Lemon Chicken Zoodles with Spinach and Tomato Sauce

1. Preheat stovetop medium heat 2
- Chicken/Zoodles:
- 4 Medium Size Zucchini (Spiralized)
- Olive oil
- Sea salt, to taste
- Black pepper, to taste
- 2 chicken breast, cut into 1-2 inch pieces
- For the sauce:
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 lemon, juiced
- 1 cup chicken broth
- 3 – 4 Cups baby spinach

- 1-tablespoon oil

- 1-tablespoon oil
- 1 onion, diced
- 2 cloves garlic, chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon fennel seeds, crushed
- 1 (15 ounce) can crushed tomatoes
- 1-tablespoon tomato paste (optional)
- 1 teaspoon Italian seasoning or oregano
- 1 bay leaf
