All Day Italian Sunday Gravy

This is a pretty close/good version of my mother-in-laws sauce, so I thought I would post it and include a picture
- 4 pounds ground beef/veal/pork (can make with just beef and pork)
- 4 bone in pork chops
- 2 pounds penne rigate
- 1 gigantic yellow onion
- 1 head of garlic
- 1 fresh batch of basil
- 1 batch fresh parsley
- 1 egg
- 6 hot Italian sausage links
- 4 slices white bread
- 1 cup milk
- 1 cup parmigiano-reggiano cheese
- extra virgin olive oil
- 1 1/2 cup dry white wine (holland house cooking wine works just fine)
- 3 (29 ounce) cans tomato puree
- 1 can tomato paste
- 2 tablespoon oregano leaves
- 2 tablespoon sugar

- 1 cup semisweet chocolate chips

Preheat oven to 350° F. Combine flour and baking soda and set aside
- 3/4 cup (1 1/2 sticks) butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 (3.4 ounce) package instant french vanilla pudding
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 2 1/4 cups all-purpose flour
- 2 cups chocolate chips
Prosciutto-Wrapped Chicken Cutlets with Sweet and Salty Stuffing -Ray

Pre-heat the oven to 450°F
- 2 tablespoons extra virgin olive oil (EVOO)
- 4 boneless, skinless chicken or veal cutlets (4-5 ounces each)
- Salt and pepper
- 1 tablespoon dry sherry (optional)
- 2 tablespoons golden raisins
- 1/2 cup grated Pecorino-Romano cheese (a couple of handfuls)
- 1/2 cup flat leaf parsley
- 1/4 cup pine nuts or sliced almonds toasted
- 1 small chili pepper (such as Italian cherry or Fresno), seeded and finely chopped, or 1 teaspoon crushed red pepper
- 3 tablespoons capers, chopped
- 2 cloves garlic, minced or grated
- 1 tablespoon grated orange or lemon zest
- 4 thin slices prosciutto de Parma
- 1 tablespoon butter, cut into 4 pieces
- 4 lemon wedges

Rub chicken breast with Seasonal All and set aside to marinate for 1 hour
- 4 boneless skinless chicken breasts, 1/2 " thick
- honey mustard
- 6 slices bacon, sliced in half
- 1/2 teaspoon McCormick's Season All
- 1 cup sliced mushrooms, drained
- 3 cups shredded colby or 3 cups monterey jack cheese
Broccoli Rice Casserole

1 Cook onion in butter in large skillet until soft
- 2 (10 ounce) boxes frozen chopped broccoli, thawed
- 2 cups cooked rice
- 8 ounces shredded cheddar cheese
- 2 (10 3/4 ounce) cans cream of chicken soup (or you use 1 can each cream of chicken and cream of mushroom)
- 1 small onion, chopped
- 2 tablespoons butter

- 5 Potatoes cut into chunks
- 1 Onion cut into chunks
- 4 Carrots (optional)
- 2 Cups Beef Stock or Broth
- 2 Cups of Water
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Italian Seasoning
- 1/4 tsp Salt and Pepper to taste
