Cheesy Spinach Rice Pilaf by Rachael Ray

Place a medium size pot over medium-high heat with two turns of the pan of EVOO, about 2 tablespoons
- 2 tablespoons extra virgin olive oil (EVOO)
- 1/3 cup orzo
- 1 clove garlic, finely chopped or grated
- 1 cup brown or white rice, such as Texmati brand
- 1 3/4 cups chicken stock or broth, regular or low sodium
- Salt and freshly ground black pepper
- 2 bunches fresh spinach, chopped (about 4 cups) or 1 box frozen chopped spinach (10 ounces), defrosted
- 3/4-1 cup grated Parmigiano Reggiano cheese
BBQ Meatball Appetizer

In a small saute pan, heat olive oil and saute onions,celery and garlic until onions are translucent
- 2 pounds ground beef
- 1 pound ground pork
- 1 cup evaporated milk
- 1 cup dry bread crumbs
- 2 large eggs
- 2 tablespoons olive oil
- 1 Large onion, finely chopped
- 2 stalks celery, finely chopped
- 2 cloves garlic, minced
- 1 1/2 teaspoons salt
- 2 teaspoons chili powder
- 1/2 teaspoon black pepper

Chicken Tortilla Soup

21 Day Fix: Per Serving 1 red, 1 green, ½ Purple, ½ Yellow
- 1 (46 ounce) can low sodium chicken broth
- 1 (15 ounce) can organic tomato sauce,
- 1 (15 ounce) can organic diced tomatoes
- 4 cups cooked chicken, shredded (I used rotisserie from the Whole Foods deli)
- 1-3 chili’s, diced (depending on heat preferences)
- 1-2 small jalapeno peppers, seeded & diced
- 1 cup diced yellow onion
- 4-6 large fresh tomatoes, diced
- 2 garlic cloves, minced
- 4 Tbsp minced fresh cilantro
- 1 Tbsp chili powder
- 3 tsp cumin powder
- 2 tsp freshly ground pepper
- 1 tsp sea salt
Crockpot Beef Stroganoff

In the slow cooker stir in all the ingredients together, (except the meat AND the Cream Cheese)
- 2 pounds cubed stew meat
- 2 cans Condensed Golden Mushroom Soup
- 1 largish onion diced
- 2-3 -4 tabls of Worcestershire
- 1/2 cup water
- 8 oz of cream cheese
- couple of dashes of Garlic Salt (1 tsp?)
- couple dashes of Hot Paprika

- 1 1\2C orzo pasta dry

- 3 Tblsp of butter
- Salt & pepper to taste
