Pecan Pie

Mix first six ingredients together with wire whisk until smooth
- 1 cup light corn syrup
- 1/2 cup brown sugar
- 3 ea eggs
- 1 t pure vanilla extract
- 1/4 t ground cinnamon
- 2 oz unsalted butter, melted
- 1 1/4 cups pecan pieces
- 1 ea 10-inch pie crust
Chicken Poppy Seed Casserole

Preheat oven to 325-f degrees
- 1 roaster chicken, chicken pieces removed and bones discarded
- 8 oz sour cream
- 1 can cream of chicken
- 1 can cream of celery
- Ritz Crackers, about 1 sleeve, crushed
- Poppy Seeds
- 1/2 stick of butter, melted
- Salt and freshly ground black pepper
Crock Pot Apple Pie Coffee Cake

Spray crock pot with non stick cooking spray or butter generously
- for apple mixture:
- 1-20 oz apple pie filling
- 1/2 tsp ground cinnamon
- 3 TBSP brown sugar
- for cake batter:
- 2-9 oz yellow cake mix (Jiffy works well)
- 2 eggs, beaten
- 1/2 cup sour cream
- 3 TBSP butter
- 1/2 cup evaporated milk
- 1/2 tsp ground cinnamon
Creamy Artichoke and Spinach Dip

Preheat oven to 375 degrees F
- 8 cups fresh spinach
- 1 clove garlic, minced
- 1 lemon, zest finely grated
- 2 (14-ounce) cans artichoke hearts, drained and coarsely chopped
- 6 ounces (about 1 1/2 cups) Parmesan, freshly grated, divided
- 3/4 cup sour cream
- 3/4 cup mayonnaise
- 1 tablespoon bottled cayenne pepper sauce
- Kosher salt and freshly ground black pepper
- Serving suggestion: Pita Chips, for dipping
Country Club Chicken

Mince the onion. Clean and slice the mushrooms
- 1 pound spaghetti
- 4 chicken breasts
- 1 large onion
- 7 oz mushrooms
- 1 can concentrated cream of mushroom soup
- (1 Unox or 2 Campbell’s)
- 4 or 5 slices bacon
- 1/4 cup dry white wine
- 2/3 cup sharp cheddar
- 1 apple
- butter or oil
- salt & pepper
No Peek Beef Stew (Slow Cooker)

Combine all ingredients in slow cooker
- 1 lb beef stew meat or 1 lb roast cut into small, bite-size pieces
- 2 carrots, finely chopped
- 2-3 potatoes, cubed
- 3 celery stalks, finely sliced
- 2 T dehydrated onion or 1/2 cup chopped onion
- 1 tsp salt
- 1 tsp sugar
- 2/3 cup water
- 1 (10 3/4 oz) can of tomato soup
- 2 T dry tapioca

Heat oven to 375ºF. Combine 1/2 cup each baking mix and sugar, and ginger in medium bowl
- 1/2 cup plus 1/3 cup packed brown sugar, divided
- 1/2 tsp. ground ginger
- 6 Tbsp. butter, divided
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup milk
- 1 egg
- 1 cup chopped mangos

- 1/4 cup (1/2 stick) butter
- 1 cup graham cracker crumbs
- 1 cup shredded coconut
- 6 ounces pkg butterscotch pieces
- 6 ounces pkg semi-sweet chocolate pieces
- 1 can sweetened condensed milk
- 1 cup chopped nuts
Strawberry Angel Trifle

Prepare and bake cake mix according to package directions; cool completely
- 1 package (16 ounces) angel food cake mix
- 2 packages (3 ounces each) strawberry gelatin
- 3/4 cup plus 1/3 cup sugar, divided
- 2 cups boiling water
- 5 cups fresh or frozen unsweetened strawberries, thawed and drained
- 2 cups heavy whipping cream
Baked Buffalo Chicken Mac & Cheese

Preheat oven to 350 degrees F and spray a 9 x 13 baking dish with cooking spray
- 1 pound elbow macaroni
- kosher salt, to taste
- 5 tablespoons unsalted butter, divided
- 3 cups rotisserie chicken or pre-cooked grilled chicken, shredded
- 2 cloves of garlic, minced
- 3/4 cup Texas Pete or your favorite hot suace, divided
- 2 tablespoons all-purpose flour
- 2 teaspoons dry mustard
- 2 1/2 cups half-and-half
- 3 cups extra sharp cheddar cheese, shredded
- 2/3 cup sour cream
- 1/2 cup Blue cheese or Gorgonzola cheese, crumbled
- 2 teaspoons Frank's Hot sauce or your favorite hot sauce (to sprinkle on top)
