BBQ Beef & Bean Cornbread Casserole

Soak beans overnight and cook until done
- For the homemade barbecue sauce:
- 1 1/2 c. ketchup
- 1/2 c. brown sugar
- 1/4 c. Worcestershire sauce
- 2 T. honey
- 2 t. salt
- 1 t. cumin
- 1 t. chili powder
- 1/2 t. allspice
- 1/2 t. crushed red pepper flakes
- 1/2 t. pepper
- Combine all BBQ sauce ingredients in a small bowl and set aside.
- For the beef and bean combination:
- 1/2 lb. dried beans (any kind, I usually use pinto or kidney)
- 1/2 – 1 lb. ground beef
- 1 onion, diced
- salt and pepper to taste
- optional: 1/2 diced green pepper, 1 diced celery stalk, 1 shredded carrot
- 2 c. barbecue sauce (homemade or from a bottle)
- For the cornbread:
- 3/4 c. corn meal
- 1 1/4 c. flour
- 1/4 c. sugar
- 2 t. baking powder
- 1/2 t. salt
- 1 c. milk
- 1 egg, beaten
- 1/2 c. vegetable oil, melted butter, or meat drippings
Beef Nacho Casserole

Heat oven to 375 degrees
- 2 tablespoons olive oil
- 1/4 pound pre-sliced sweet red peppers (about 1/2-inch-wide strips)
- 1/4 pound pre-sliced sweet yellow peppers (about 1/2-inch-wide strips)
- 1 pound lean ground beef
- 1/2 teaspoon garlic salt
- 2 tubes(10 ounces each) refrigerated pizza dough
- 3 cups shredded taco-cheese blend
- 1 jar(16 ounces) medium-hot salsa
- 1 can(2.2 ounces) sliced black olives, drained (about 1/4 cup)
- 3 large scallions, trimmed and sliced
Tater Tot Egg Casserole

Bake tater tots according to directions
- 25 frozen tater tots
- 1/2 lb Italian breakfast sausage like Jimmy Dean all natural
- 1/2 small onion chopped
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 tablespoon parsley
- 4 large eggs
- 4 large egg whites
- 1 cup sharp cheddar shredded
- 1 cup Monterey Jack shredded
- 1/4 cup provel cheese
Slow Cooked Asian Chicken

Rinse chicken and pat dry with paper towels
- 6 whole chicken legs
- 1/2 cup soy sauce
- 1/4 cup packed light brown sugar
- 1 clove garlic, crushed
- 8 ounces can tomato sauce
Breakfast in a Mug

Coat a 12-ounce microwavable coffee mug with cooking spray
- 1/2 cup frozen shredded hash browns
- 1/3 cup refrigerated liquid egg whites or 2 eggs, beaten
- 1 tablespoon water
- 1 frozen precooked turkey sausage link, cut into 1/2-inch chunks
- 2 tablespoons shredded sharp Cheddar cheese, divided
Orange Bourbon Ham

Preheat oven to 325 degrees F
- 1 (4- 5-pound) bone-in smoked ham half, fully cooked, unsliced
- 1 orange, thinly sliced
- 1 cup honey
- 1/2 cup orange marmalade
- 1/3 cup bourbon or whiskey
- 1/8 teaspoon ground cloves
Cheddar Bacon Biscuits

Heat the oven to 425 degrees
- 2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted
- 8 strips thick cut bacon, cooked until crispy and diced
- 1 cup onion, small dice
- 1 cup cheddar cheese, shredded
Chicken Pasta Bake

Preheat oven to 350 degree F
- 1 pound penne pasta
- 2 pounds ricotta cheese
- 3/4 cup grated Parmesan cheese
- 1 (12-ounce) can fat-free evaporated milk
- 1 egg
- 1 tablespoon garlic powder
- 1 1/2 teaspoons salt
- 3/4 teaspoon black pepper
- 1 (10-ounce) package frozen chopped broccoli, thawed and well drained
- 1 (10-ounce) package or 2 cups cooked chunked chicken breast
- 2 cups shredded mozzarella cheese
5 Star Peach Crumb Bars

Think of it as a peach cobbler hooking up with a crumb cake and sugar cookie
- 4 1/2 cups peaches, peeled, pitted and diced (about 8 small peaches, use firm but ripe)
- 1 3/4 cup granulated sugar, divided
- 3 1/2 tablespoons cornstarch
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 2 tablespoons orange juice
- 1 teaspoons orange zest (optional)
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup salted butter, cold and diced into cubes
- 1 large egg
- 1/4 cup sour cream
- 1 1/2 teaspoons vanilla extract

Preheat oven to 350. Spray an 8x8 baking dish with non-stick spray
- 8 ounces cream cheese softened
- 1/4 cup sour cream
- 3/4 cup enchilada sauce divided
- 1/2 cup frozen corn kernels
- 4 ounces canned green chiles
- 1 cup grated monterey jack cheese divided
- 1 cup grated cheddar cheese divided
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 2 cups cooked shredded chicken
- 4 8-inch flour tortillas
