Cauliflower, Bacon & Cheese Soup (Crock Pot)

Combine cauliflower, onion, carrot, celery, and chicken stock in slow cooker
- 1 med. head of cauliflower, separated into flowerets
- 1 med. onion, chopped
- 1 carrot, chopped 1 rib celery, chopped, or about 1/4 to 1/2 cup
- 4 cups chicken stock
- 1/2 tsp. Worcestershire sauce
- 1 cup Cheddar cheese, grated
- salt and pepper
- 2 cups half-and-half or light cream
- chopped chives crispy bacon crumbled for garnish and yumminess
Honey Ginger Chicken

Preheat oven to 425F. 1
- 3 tablespoons cooking oil
- 3 tablespoons butter or margarine
- 1/3 cup flour
- 3/4 teaspoon salt
- 1 teaspoon ground ginger (divided)
- 1/4 teaspoon pepper
- 3 pounds chicken drumsticks or thighs
- 1/3 cup honey
- 1/3 cup chili sauce
- 1/3 cup soy sauce
Tomato Tart

For the crust: Spray a 9-inch tart pan with a removable bottom with vegetable oil spray; set aside
- Crust
- 1 1/4 1 1/4cups 1/4 unbleached all-purpose flour (6 1/4 ounces)

- 1/2 1/2teaspoon 1/2teaspoon table salt

- 1 1ounce 1/2 grated Parmesan cheese (about 1/2 cup)
- 1 1ounce 1/4 mozzarella cheese, shredded (about 1/4 cup)

"Fajita" Burgers

Preheat grill to medium-high
- 1 pound 90%-lean ground beef
- 3/4 cup chopped fresh cilantro, divided
- 1/2 cup finely chopped red onion
- 1/4 cup chopped scallions
- 2 teaspoons minced garlic
- 1 tablespoon chili powder, preferably New Mexican
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano, preferably Mexican
- 1/2 teaspoon freshly ground pepper
- 1/4 teaspoon salt
- 1/3 cup reduced-fat mayonnaise
- 1 tablespoon lime juice
- 1 tablespoon chopped chipotle chile in adobo, (see Ingredient Note)
- 1/2 cup shredded Monterey Jack cheese
- 4 French rolls, preferably whole-wheat, split and toasted
- 2 roasted Anaheim or poblano peppers, (see Tip)

BBQ Chicken and Pineapple Quesadillas

Heat a pan over medium heat
- 1 (10 inch) tortilla
- 1/4 cup cheddar, shredded
- 1/4 cup jack, shredded
- 1/4 cup chicken, cooked, shredded or cut into small pieces and warm
- 2 tablespoons BBQ sauce
- 1/4 cup pineapple, sliced and optionally grilled
- 1 jalapeno, sliced

Brunswick Stew

Place the pork and chicken in a 1 1/2 gallon stock pot with enough water to cover
- 1 pound Boston butt pork roast
- 1 pound fresh chicken or hen, bone in
- 1 pound boneless beef chuck roast
- 1 pound red potatoes, peeled and quartered
- 2 1/2 teaspoons ground black pepper
- 1/8 teaspoon ground cayenne pepper
- 1 small sweet onion, such as Vidalia, chopped
- 6 cups canned whole peeled tomatoes
- 3/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 2 1/2 teaspoons salt
