Apricot Glazed Chicken

Whisk together soy sauce, vegetable oil, vinegar, garlic, ginger, salt, red pepper and apricot jam to make marinade
- 1/4 cup low-sodium soy sauce
- 2 tbsp vegetable oil
- 2 tbsp cider vinegar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced and peeled
- 1/4 tsp each salt and black pepper
- 1/4 tsp crushed red pepper flakes
- 2/3 cup apricot jam
- 4 bone-in chicken breast pieces
Guacamole with Lime

Slice avocados in half and remove seed
- 2 ripe avocados
- 1/2 tsp kosher salt
- 2 tbsp fresh lime juice
- 2-4 tbsp minced red onion or thinly sliced green onion
- 1-2 serrano chiles, stemmed, seeded and minced
- 2 tbsp cilantro leaves and tender stems, finely chopped
- dash of freshly ground pepper
- 1/2 ripe tomato, seeds and pulp removed, chopped and reserved
Oven Roasted Tuscan-Style Chicken with Fingerling Potatoes

Preheat oven to 350 Place chicken in a mixing bowl
- 4 boneless, skinless chicken breasts
- 1 tbsp canola oil
- 1 tbsp Tuscan seasoning (includes oregano, paprika, fennel, garlic, onion, and anything else you'd like to include)
- 1 medium white onion, cut in 1/4" dice
- 4 garlic cloves, thinly sliced
- 1 red bell pepper, seeded and cut in 1/4" dice
- 1 lb fingerling potatoes, halved lengthwise
- 1/4 cup white wine
- 1 14 1/2 oz can stewed tomatoes
- 2 tbsp thinly sliced fresh basil
- 4 slices fresh mozzarella
Grilled Halibut

Brush halibut on both sides with olive oil and season to taste with salt and pepper
- 2 lbs fresh halibut fillet, cut into 6-8 oz portions
- 2 tbsp olive oil
- salt
- freshly ground pepper
Spinach Waldorf Salad with Cinnamon-Apple Dressing

In large bowl, mix mayonnaise, juice concentrate and cinnamon until well-blended
- 1/2 cup mayonnaise
- 2 tablespoons frozen apple juice concentrate, thawed
- 1/4 teaspoon ground cinnamon
- 2 large red eating apples, cubed (about 4 cups)
- 1/2 cup seedless red grapes, halved
- 1/2 cup chopped celery
- 1/2 cup chopped walnuts
- 4 cups torn fresh spinach leaves
Gorgonzola-Artichoke Dip

Heat oven to 350 degrees. Spray 8-inch quiche dish, or 8 or 9 inch glass pie pan with nonstick cooking spray
- 5 slices of precooked bacon
- 1 can artichoke hearts, well drained, chopped
- 1 package (8 oz) cream cheese, softened
- 1/2 cup crumbled Gorgonzola cheese
- 1/2 cup shredded Parmesean cheese
- 2 teaspoons lemon juice
Fresh Mozzarella Appetizer with Fruit, Baby Greens and Vanilla Vinaigrette

Chill an appetizer plate in the refrigerator
- Vanilla Vinaigrette:
- 4 cups baby spring salad greens
- 1 lb fresh mozzarella, sliced
- 2 nectarines, thinly sliced
- 1 pt fresh raspberries
- 1 pt fresh blueberries
- 1/2 cup rice wine vinegar
- 4 tbsp honey
- 1 cup olive oil
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 1 vanilla bean
Mango Cucumber Salsa

Whisk lime juice and honey in a medium resealable container until well combined
- 6 tbsp fresh lime juice
- 2 tbsp honey
- 4 cups 1/4 inch cubes sliced mangoes
- 3 cups 1/4 inch unpeeled cucumber cubes
- 1 1/3 cup minced red onion
- 2 tbsp minced and seeded green jalapeno pepper
- salt, to taste

- 2 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup oats (uncooked)
- 3/4 cups sugar
- 3/4 cups dark brown sugar
- 1 cup butter, softened
- 2 large eggs
- 2 tsp vanilla
- 1 tsp lemon juice
- 12 oz chocolate chips

- 1 teaspoon onion powder
- 1/2 teaspoon white pepper
- 1/2 teaspoon ground nutmeg
