Fire Roasted Yellow & Red Pepper Grilled Turkey Sandwich

Spread a tablespoon of pesto on each slice of sourdough bread
- 2 slices Sourdough Bread
- 2 tablespoons Pesto Alla Genovese
- 2-3 slices Smoked Turkey Breast
- 1 jar Fire Roasted Yellow & Red Peppers
- 1-2 slices Sliced Havarti Cheese
Buffalo Chicken Panini

Heat a heavy skillet over medium heat
- 1 package Pulled Chicken in BBQ Sauce
- 1/4 cup Low Fat Mayonnaise
- 2 tbsp Light Sour Cream
- 1/4 cup Crumbled Blue Cheese
- 1 Green Onion (white and light green parts), finely chopped
- 1 stalk Celery Hearts, trimmed and thinly chopped
- 1 pinch (each) Sea Salt and Black Pepper, freshly ground, to taste
- 4 Panini rolls
- Butter
Grilled Molasses Pork Tenderloin

Place all ingredients into a resealable plastic bag; marinate for at least one hour
- 2 cups molasses
- 1/2 cup soy sauce
- 1/4 cup olive oil
- 3 tbsp fresh ginger, grated
- 2 tbsp garlic, minced
- 1/4 cup Worcestershire sauce
- 1/4 cup lemon juice
- 2 onions, cut in 1/4" slices
- 2 pork tenderloins (1 1/2 - 2 lbs each)
Granny Smith Apple Salsa

Stir together tomato, onion, lime juice and jalapeno in a medium bowl
- 1 large tomato, cored and finely chopped
- 3/4 cup finely chopped sweet onion
- 3 tbsp freshly squeezed lime juice
- 1 large jalapeno chili, cored, seeded and finely chopped
- 2 granny smith apples
- 2 tbsp minced fresh cilantro
- 1 tbsp honey
- salt
- freshly ground pepper

Baked French Onion Soup

Add 3 tablespoons oil to a large soup pot or saucepan over medium/high heat
- 3 tbsp vegetable oil
- 6 medium white onions, sliced
- 8 cups beef broth (Swanson is best)
- 1 cup water
- 2 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 5 plain hamburger buns
- 10 slices provolone cheese
- 10 tsp shredded parmesan cheese
Baked Ziti with New York Style Sausage

Preheat oven to 350 In a preheated nonstick skillet over medium heat
- 2 tbsp olive oil
- 1 tbp crushed garlic
- 1 tbsp finely chopped shallot
- 3/4 lb sausage
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 1/2 cups diced eggplant
- 1 1/2 cups diced brown mushrooms
- 1/4 cup white wine
- 1/4 cup chicken stock
- 2 tbsp chopped fresh basil
- 1/2 of 8 oz container part-skim ricotta cheese
- 3/4 cup shredded mild provolone cheese
- 1 1/2 cups crushed tomatoes in puree (or your favorite pasta sauce)
- 8 oz ziti or penne pasta, cooked according to package instructions
- 1/4 cup grated Romano or Parmesan cheese
- 1/2 cup shredded smoked provolone cheese
Avocado Ranch Salad Wraps

Combine avocado, lime juice and ranch dressing
- 1 avocado, cut in 1/2" dice
- 2 tsp fresh lime juice
- 1/2 cup ranch dressing
- Salt
- Pepper
- 1 lb turkey breast
- 4 cups mixed salad greens
- 4 10" flour tortillas
- 12 grape tomatoes, halved
- 1/4 cup chopped cilantro
- 1/4 cup sliced red onion
- 3 tbsp shredded extra-sharp white cheddar cheese

Combine chicken broth, water, half & half, cheese, flour, onion and pepper in a large saucepan
- Garnish:
- 4 cups chicken broth
- 1 cup water
- 1 cup half & half
- 4 slices Kraft Cheddar Singles
- 1/2 cup all-purpose flour
- 1/2 tsp dried minced onion
- 1/4 tsp ground black pepper
- 4 cups broccoli florets (bite-size)
- 1/2 cup shredded cheddar cheese
- 2 tsp minced fresh parsley
