Southwestern Grilled Flank Steak with Mexican Corn Salad

Combine all ingredients for marinade
- Marinade:
- 1 cup yellow onion, sliced
- 2 tbsp lime juice
- 1/4 cup olive oil
- 1 tbsp garlic, minced
- 2 tsp cumin
- 1 tsp cayenne pepper
- 2 tbsp cilantro, chopped
- 1 flank steak (2-3 lbs)
- Corn Salad:
- 2 cups corn kernels
- 1/2 each red and green pepper, diced
- 1 tomato, diced
- 2 tbsp red onion, diced
- 2 tbsp olive oil
- 1 tsp lime juice
- 1 tbsp cilantro, chopped
- 1/4 tsp ground cumin
- 1/4 tsp salt and pepper
Orange Chicken

Sauce: Combine all ingredients in small bowl and set aside
- Orange Sauce:
- 2 lbs boneless chicken pieces, skinned
- 1 egg
- 1 1/2 tsp salt
- white pepper
- oil (for frying)
- 1/2 cup plus 1 tbsp cornstarch
- 1/4 cup flour
- 1 tbsp minced ginger root
- 1 tsp minced garlic
- dash crushed hot red chilies
- 1/4 cup chopped green onions
- 1 tbsp rice wine
- 1/4 cup water
- 1/2 to 1 tsp sesame oil
- 2 tsp minced zest and 1/4 cup juice from large orange
- 1/2 tsp sugar
- 2 tbsp chicken stock
- 1 tbsp light soy sauce

- 5 cups Low Sodium Chicken Broth
- 1 cup Whole Brined Chicken leftovers (find at Trader Joe's)
- 1 can Great Northern Beans, drained
- 1 can Hatch Green Chiles
- 1 tablespoon Cumin
- 2 teaspoons Black Pepper
- Pinch of Crushed Red Chile Pepper
- 1 tablespoon Cornstarch
- 3 tablespoons Water
- Cilantro, chopped
French Onion Soup

- 2 tbsp butter or margarine
- 4 cups sliced onion
- 3 cups beef broth
- 1 1/2 cups water
- 1 tbsp cooking sherry
- 1 tbsp worcestershire sauce
- 1/4 tsp black pepper
- 1 dash dried thyme
- 1 cup soft croutons
- 1/2 cup shredded mozzarella cheese
